  • Step 1

    Place water in the bottom of a double boiler. If you do not have a double boiler, you can make one by filling a small saucepan with water and placing a heatproof bowl on top. Bring the water to a boil (with the top of the double boiler on top). Add the chocolate chips and coconut oil to the top part of the double boiler or to the heatproof bowl. Stir well occasionally until the chocolate is completely melted.

    Once the chocolate is melted, add in the roasted salted peanuts. Stir until the peanuts are all coated in chocolate. A spatula is the best tool for the job.

    Use a 1 oz cookie scoop to portion the clusters. Scoop the chocolate peanut mixture onto a parchment-lined baking sheet. Place the baking sheet into the fridge until the clusters are nicely firm.

    Store the clusters in the fridge until ready to consume. They will store in the refrigerator for up to two weeks in an airtight container and even longer in the freezer.
