  • Step 1

    Heat the olive oil in a skillet over a medium heat and add the prosciutto. Cook through until crisp and golden.

    Add the spinach to a large salad/serving bowl. Roughly tear the mozzarella, thinly slice the avocado and finely dice the onion. Add to the bowl along with the basil. Season with salt and pepper and drizzle over the remaining oil and lemon juice. Toss to combine.

    Tear over the crispy prosciutto to serve.

    Great salad! Loved the combination of prosciutto, basil, avocado, cheese and spinach. I added. Baby kale in addition to the spinach.
