  • Step 1

    Preheat an oven to 350 F. Prepare a muffin tin lining it with silicone liners or paper liners, spraying each with nonstick cooking spray. In a food processor, combine the coconut flour, coconut oil, salt, baking powder and confectioners sugar together. Pulse until combined and crumbly.

    Add the eggs and blend until just mixed. Allow the mixture to set up for a few minutes and it will thicken.

    Scoop evenly into 10 liners and bake for 16-18 minutes until puffed and golden brown on top. Allow to cool slightly before attempting to remove from the liners if using silicone.

    Amazing! This was my first time in four weeks that I’ve ate a bread like treat. This did not disappoint! Light and moist! I was worried about having too much of a coconut flavor so instead I did a 1/4 cup of coconut flour and a 1/4 cup of almond flour. I am in heaven!

      Hey So I am new... serving size says 3/4 does that mean I only get to eat 3/4 of the muffin?

        One serving is 1 muffin. Each muffin should be about 1.35 Ounce.

          The ingredients mention coconut oil, but it isn't mentioned in the instructions. I assume you pulse it with the dry ingredients to make the crumbly dough.
