  • Step 1

    Add the spinach to a colander and wilt under boiling water. Set aside to cool completely.
  • Step 2

    Roughly chop 1/3 cup of basil and the sundried tomatoes. Once the spinach is cool, drain off any excess water and roughly chop. Add to a mixing bowl with the ricotta, tomatoes, basil, nutmeg, parmesan, salt and pepper. Beat well to combine.

    Arrange the chicken slices across a clean work surface. Dividing the mixture evenly, spoon a heaped teaspoon into the center of each chicken slice.

    Fold the edges up around the filling to make a square parcel. The filling should be sufficient to help stick the ravioli together.

    Heat one tablespoon of butter in a large frying pan over a medium heat and gently add the ravioli. You may need to do this a batch at a time. Fry for 3-4 minutes on each side until lightly browned all over and thoroughly cooked throughout. Remove the ravioli from the pan and set aside.

    Add the remaining butter to the pan over a medium heat until browned. Add the chopped basil to the pan briefly to wilt.

    Remove from the heat and pour over the ravioli to serve.

    I'm taking most ingredients from this recipe but using chicken thighs diced (cooked) , 1 italian sausage and adding chopped fresh diced tomatoes that are in evoo with spices and layering in like a lasagna with an egg life wrap, in a bread pan. Wanted to use up my ricotta !

        Here's the problem: these "chicken slices" are basically a lunch meat that you get from the UK, not the US. The prepackaged stuff in the US you'll never get it close to make a ravioli. Eat it cold or don't waste your time

          Absolutely amazing. Couldn't fold it into square because it kept breaking, so made rolls. But the flavourful is spectacular.

            Wrapping didn't go well and was left with half the filling left over so not a clue on how to enter it into my day. Only ate 4.

                I made this tonight for my non-keto family and they loved it. I couldn’t get the ravioli to to form into a square (I used boars head lunch meat chicken). I instead rolled them up, keeping the cheese mixture away from the sides. I don’t know how you could go wrong with chicken and cheese sautéed in butter. With LOTS of basil ❤️❤️

                    I made this tonight and it's a keeper. I read the other reviews and just folded it like a Cannoli :). The filling will seep out so don't fill all the way to the edge. YummY

                      Making to ravioli was next to impossible but these are not bad. My daughter loved them for me they were ok.

                        This was a delicious recipe. I had a very difficult time with the wrapping. I used a Jeani-O sliced deli breast, and it was likely toooo lean for the wrapping, it needed to be a pressed chicken perhaps? As far as flavor goes, mmmmmwah! Delish. The visual just wasn’t as appealing, but at the end I just stuffed and folded over in a crescent shape. Good enough. I also ended up with twice the filling, for me this is nice, because I cook. It could be an amazing omelette filling, pizza sauce, stuffed celery. I could go on and on. Thanks so much for this contribution!

                        These were delicious. It was a little tricky folding and getting them to stay, but I managed to make them for 7 people total. The filling is delicious. I omitted to make butter sauce and ate without it and it was still amazing. May try it with Alfredo sauce next time. Thanks for the recipe.

                        My husband & I are new to Keto (1st week) & had to try your recipe. Our supermarket only had the square chicken which was a little thicker, so we made it cannelloni style instead. I also grated fresh nutmeg into the butter sauce instead of in the mix. Delicious & so filling. Thank you for the recipe :)

                        My whole family LOVED this! We are Italian and eat a lot of that kind of food. I am the only one going low carb/Keto so I try to find things we all can enjoy. I served it with pasta and red sauce for them (not me) and they actually preferred it just the way it is! The chicken slices give a great consistency. I added coked crumbled Italian sausage on top. This is my favorite recipe and will probably make about once a week!
