Keto Mock Potato Salad

6 ratings

Who doesn’t love potato salad? This mock version may be sans potato, but everything else you can love about this side dish is classically delicious. Tangy mayo and dijon hold the components together, and it’s seasoned with fresh dill and paprika. You won’t miss the potatoes for a second!

Don't use "light" mayo. Use regular. Not sure why the it calls for light mayo in a keto recipe

I copied the recipe to My Foods, deleted the light mayo, entered in the mayo I used. It made a dramatic decrease in carbs!

It is 4 servings, so I am going to say that it is the cauliflower where the carbs are coming from, although it's a combination of things. there are 5 grams of carbs in 100g of cauliflower.

I’m curious - why light mayo on a keto diet? I’ve never found light mayo without sugar or high fructose corn syrup. I only ever use avocado mayo by Primal.

I agree…I think the light is a mistake.

Either boil your own cauliflower or you can steam. In a quick pinch, you can easily use the steamed cauliflower florets found in the freezer aisle of your grocery store.

This is an awesome cauliflower recipe. It’s creamy and the Dijon gives a little spicy taste. Highly recommend this one.
