Artichoke Hearts Or Globe, Canned In Oil Mixture
10 ounce
Olive Oil
1 tablespoon
Garlic
1 clove
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon
Lemon Juice
2 teaspoon
Cheddar Cheese
¼ cup, grated
Mayonnaise
⅓ cup
Parmesan Cheese
¼ cup, grated

Step 1
Preheat the oven to 380 degrees Fahrenheit.Step 2
Slice the artichoke hearts in half and add to a mixing bowl along with the minced garlic, olive oil, lemon juice, salt and pepper. Toss well to combine.Step 3
Add the mayonnaise, cheddar cheese and parmesan to the bowl and stir together well, coating the artichokes.Step 4
Transfer the mixture to a small baking dish and bake for 15 minutes until the cheese is golden brown and bubbling.

This was very flavorful. I didn’t realize I didn’t have regular cheddar cheese so I used my aged sharp white cheddar. I’m so glad I did because the flavors were out of this world. The only thing I didn’t like was it was too loose. I would’ve liked it better if it held together a little better. I also baked it for double the time to get it to have just a touch of golden color. I wonder if maybe I should mix in the Parmesan and sprinkle that over the top. Just a thought.
