  • Mayonnaise

  • Step 1

    Preheat the oven to 380 degrees Fahrenheit.
  • Step 2

    Slice the artichoke hearts in half and add to a mixing bowl along with the minced garlic, olive oil, lemon juice, salt and pepper. Toss well to combine.

    Add the mayonnaise, cheddar cheese and parmesan to the bowl and stir together well, coating the artichokes.

    Transfer the mixture to a small baking dish and bake for 15 minutes until the cheese is golden brown and bubbling.

    This was very flavorful. I didn’t realize I didn’t have regular cheddar cheese so I used my aged sharp white cheddar. I’m so glad I did because the flavors were out of this world. The only thing I didn’t like was it was too loose. I would’ve liked it better if it held together a little better. I also baked it for double the time to get it to have just a touch of golden color. I wonder if maybe I should mix in the Parmesan and sprinkle that over the top. Just a thought.
