Step 1
*Melt 1 TB of butter. Then, combine it in a bowl with the 1 cup of Frank’s Hot Sauce. Set this bowl aside for later use.Step 2
In a food processor, combine the raw chicken breast with all the remaining ingredients except for the olive oil. You may want to pat the chicken breast dry with a paper towel and then roughly chopping it into pieces before adding it to the food processor.Step 3
Form approximately 8 meatballs that are about 2-inches wide each.Step 4
Heat the olive oil in a skillet not much larger than the space your meatballs will take up to a medium-high heat. Place the chicken meatballs evenly in the oil. Slowly rotate the meatballs with a pair of cooking tongs until all the sides are golden brown, and the chicken is cooked through (165 degrees internal temp.). This can take 5-10 minutes, depending on your heat level.Step 5
Turn the heat down to a medium-low, and pour the butter-hot-sauce mixture from earlier over the meatballs. Cook until the sauce comes to a gentle simmer, and all ingredients are heated through.Step 6
Enjoy as is with toothpicks for a snack or appetizer, or add the buffalo chicken meatballs to other favorite Carb Manager meals!

I used prepackaged ground chicken which made it so much easier and quicker to make. Great and easy meal

These were delicious! I made them for dinner one night and served them over a bed of celery with blue cheese crumbles and a side salad!
