Meatballs, cheese, and cream sauce… could this meal be more delicious? Pork meatballs are stuffed mozzarella cheese and then baked in a tomato cream sauce. This recipe uses coconut milk but feel free to use milk, half and half or cream.

  • Ground Pork

  • Step 1

    Preheat your oven to 375 degrees Fahrenheit. Mix the ground pork, ½ tsp. salt, ¼ tsp. dried basil, ¼ tsp. dried oregano, ½ tsp. dried thyme, and 1 clove of grated garlic in a bowl.

    Set aside about 1.5 ounces of mozzarella. Form the meatballs into 8 meatballs. Flatten the balls and place a small cube of mozzarella cheese in the center of each ball, then wrap the meat up around the cheese and roll it back into a ball. Do this with all of the meatballs. Bake the meatballs at 375 degrees for about 8 minutes.

    While the meatballs are baking, add ½ tablespoon of olive oil in a pan over medium heat. Once hot, add a grated clove of garlic to the pan. Once fragrant, add in the tomato sauce, basil and ¼ teaspoon of salt.

    Bring to a boil and then reduce the heat to medium low so the sauce just simmers. Add in the coconut milk and give a stir. Heat until the mixture begins to simmer, and keep the heat low enough that the mixture just simmers. Remove the half-cooked meatballs to the pan and coat them in sauce.

    Place the pan into the oven for about 10 minutes. Take the pan out of the oven and grate the remaining mozzarella cheese on top. Turn the oven on broil and broil for about 1 minute, or until the cheese begins to bubble and brown. Top with additional basil or italian seasoning!

      Awesome! I need to double this recipe and freeze some next time. I added an egg which made it to soupy, so I added a little almond flour until it had the right consistency. The sauce was delicious but I think I'll double the sauce recipe next time. Served it with fried zucchini and italian flat bread.

                  Just made this for tea. Sauce is nicer if you add a beef stock cube and more basil and oregano. I also added some hot chill pepper to give it a kick. We had it with zoodles.

                      Used this as my meals for work. I made 24 meatballs for 6 days worth and froze them until I was ready to use them and just took them out the day before... they held there flavour brilliantly and I'll definitely be doing it again

                        Family loved it. Tripled the recipe and made 12 big meatballs. Used cream instead of coconut milk. Added red pepper flakes to the sauce. Super good!

                            If you ate only four meat balls and half cheese sauce etc would you have 1/2 the Tcarbs, net,fat protein than what it says for whole recipe ,pls and thank you

                                  All I could say is...YUM. It took longer than listed, but that could have been my inexperience. I put it over zoodles. My husband loved it as well. I substituted regular milk for the coconut milk, and used a prepared marinara sauce.

                                    Just made these and they were delicious! Made with beef instead of pork because.my local grocery store did not have ground pork, they were so good! Had with skinny girl pasta which is no carbs.I cooked in over for 10 minutes then just simmered them in sauce on the stove for about 20 min, turning them over half way through. Will make again!

                                      I doubled this recipe for my family of 4. They loved it and want it again. I had sauce left over. I froze it in 1/2 Cup to use for lunch meals on what ever meat I have.

                                          I think t would like this better with 1/2 beef and 1/2 pork. But the sauce was delicious and didnt taste coconutty (if that's a word)! Will definitely make this sauce again.

                                            KathleenH I totally agree. I made it today and although very good, it would be better with 1/2 pork and 1/2 beef, or even 1/2 pork and 1/2 ground turkey.

                                            I recommend that anything made with poultry be fully cooked prior to freezing. Hope you enjoy!
