Keto Braised Short Ribs

I like being able to cook meats in one pot and then forget about them. Forgetting about these in the oven will produce super tender, delicious ribs. The most labor intensive part of this dish is searing off the ribs, which are then covered with stock and then baked in the oven at a low temperature. This recipe makes enough for a couple meals so you’ll have leftovers which is a win-win in my opinion! I used apple cider vinegar to deglaze the onions after searing the ribs which allows the flavors to release from the bottom of the pan into the braising liquid. So delicious and easy!

Recipe calls for 1 T rosemary but use 1 sprig and for thyme recipe calls for 3 T but use 6 generous sprigs.

  • Step 1

    Preheat an oven to 325 F. Heat a dutch oven, over medium-high heat until very hot. Add coconut oil. In the meantime, sprinkle ribs all over with salt and black pepper.

    Sear off the ribs, adding them to the pot in a single layer. Cook on each side until nice and browned. Each side will take about 5 minutes or so. Remove to a plate or sheet tray and repeat with the other ribs until they are all seared.

    Add in sliced onion and whole garlic cloves. Cook for 4-5 minutes until browned. Add a pinch of salt and apple cider vinegar. Scraping the pan to release tasty browned bits.

    Add ribs back in and top with stock. Push ribs down in the stock to make sure they are submerged in the liquid. Bring the pot to a boil. Turn off the heat and place the lid on the pot.

    Place dutch oven in the oven and bake until ribs are tender about 2 ½ hours. The ribs should pull gently from the bone, but not fall off completely.

    Oh I might have found the issue maybe. It says there are 149.5g of macro nutrients in a 100g serving.... I'm not an expert but that seems impossible. How could the parts weigh more than the whole?

      Hmm something seems very strange about the calories for this one. How can 100g of beef rib on its own be 470 calories but 100g of beef rib in this recipe be over 1000? The other ingredients being added aren't super caloric. I must be missing something 🤔

        I added red wine, 200ml give or take, and cooked for 25 minutes in a pressure cooker. I know; guilty as charged. I love it, no keto, but regrets also. I will do better next time.

          very fatty, but tasty. I would try with pork ribs! Should make a great beef stock after fat is removed

            3.76 lbs of short ribs yielded 1.85 lbs of cooked meat. So it’s about 50/50.

                        So flavorful and tender. I snuck in about 1/4c of red wine too. Served it with loaded cauli-mash and broccoli.

                          What is a serving size? I took meat off bones to calculate oz not sure if its accurate . We were over our serving allowNces

                            It looks like the app does not adjust for bone weight And calculates like you are eating a half pound of beef. Which you obviously aren’t. I plan to re-enter the recipe and put 1.5lb and use 3lb to make up for bone weight, that should get it in the ball park.

                            400 calories per serving of short ribs which is 3 ounces, in this recipe a serving is 1/2 pound that’s why it’s so high. Eat the proper serving and you should be fine.
