Barbacoa is a slightly spicy, savory beef that is delicious in tacos, burritos, enchilada, etc. On top of healthy cauliflower rice, barbacoa bowls are a fantastic lunch meal prep recipe! This recipe nutritional value only accounts for the barbacoa and cauliflower rice. Add additional toppings at your discretion, such as fresh arugula, avocado, jalapeno, cilantro, sour cream, guacamole, cheese, or hot sauce!

  • Olive Oil

    2 tablespoon

  • Cauliflower Rice

  • Step 1

    Preheat an oven to 300 degrees and spray a baking dish with pan spray. Place the chuck roast in the dish. Sprinkle the salt, pepper, cumin, garlic, paprika, cayenne, and onion powder over the roast. Drizzle the olive oil over the roast as well.

    Wrap the dish in foil, and bake the beef chuck for 4 hours. When it’s tender enough, shred the beef apart into fine shreds.

    Prepare your barbacoa bowls in 4 meal prep containers. Fill each container with a ½ c. of prepare cauliflower rice and ¼ of the shredded barbacoa. Add additional toppings at your discretion.

    I cooked it in a slower cooker, low 8-hrs adding upto 3/4 C of water as needed. DELISH. Used the Zero tortillas and fixings.

      My roast is a little over 3 pounds. I doubled the seasoning but do you think I should cook it longer? Thanks in advanced.

        How can long would I cook this if I use a slow cooker? I'm new to all of this and am so excited to find delicious recipes like this. I each Barbacoa all the time at Chipotle, but I'm sure their version isn't keto friendly! lol

          I brown my meat first. Then I sprinkled the seasoning on both sides of meat, added about 1/2 cup water and slowed cooked for 8 hours. Comes out perfect every time.

          Chipotle is keto friendly if you skip the rice, beans and corn and tortillas and go easy on the sour cream. I usually get a bowl, with peppers, lettuce, meat, salsa, cheese and guacamole.

          Yes, the barbacoa and cauliflower rice are included in the nutrition here. All other ingredients are added at your discretion.

        I am curious, has anyone tried this with chicken? I am having difficulty getting chuck roast with meat shortages in my area lately.I stockpiled chicken in my freezer. If the seasonings compliment chicken as well, how long did you cook it?

          You can certainly slow-cook a chicken and shred it. It's common in Mexican food. Just find the right seasonings and slow roast it.

        I had a 1.4 lb chuck and followed the directions to a tee. I thought it looked burnt when it came out but NO it was perfect and fell apart after exactly 4 hours of cooking. I live with non-keto muggles and they ate it in taco form. I ate mine like a taco bowl with sour cream, cheese, and veggies. Now I’m full but sad there are no leftovers.

          So yummy!!! I marinated roast for 4 hours and let it come to room temp prior to roasting. No need for toppings!!!

              DELICIOUS ! I tried this with a dab of sour cream, and a splash of sriracha. Tasted soooo good. Washed it down with raspberry habiscus tea w/Stevia.
