Keto Garlic & Herb Lamb Meatballs
Lamb is a delicious addition to a Keto/low carb diet. It’s full of healthy fat and is a great source of Vitamin B12, iron, and zinc. These lamb meatballs are simple yet flavorful. They are delicious with cauliflower rice, roasted or sauteed vegetables, or dipped in a low-carb hummus dip!

Ingredients
Ground Lamb
18 oz
Dill
¼ cup, sprigs
Parsley Raw
3 tbsp
Garlic
2 clove
Salt
¾ teaspoon
Black Pepper
¼ tsp
Recipe Steps

Step 1
Chop dill and garlic and add to a bowl. Grate the garlic and add the garlic and salt to the bowl.Step 2
Add the ground lamb and mix well.Step 3
Form 26 golf ball-sized meatballs and place on a parchment covered sheet pan. Bake at 400 degrees for approximately 20 minutes.Step 4
Enjoy hot on their own, on a salad, or with cauliflower rice!

I made this and there is a high "lamb/gamey" taste to it- not what I expected....I think I will delete it from my meal plan next time.. I will curry the rest so I can eat it... For serving size, I went with the 4oz of meat standard..

Form into 24 meatballs (not 26) as yields 6 servings and each serving is 4 meatballs. Make sure you have plenty of salad as it could be tempting to have more than four!

Was a little disappointed how small the meatballs needed to be but you can easily do two servings and it is still filling regardless. Not to mention omg delicious!
