  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Heat a tablespoon of olive oil in a frying pan over a medium/high heat. Dice the chicken, add to the pan and cook through until browned all over. Remove from the pan and set aside.

    Whilst the chicken is cooking, add the cauliflower to a pan and cover with water. Bring to a boil and simmer for a few minutes until just tender. Drain the water and set aside.

    Add the remaining oil to the frying pan and roughly chop the bacon. Cook until browned all over then arrange in an oven dish along with the chicken and cauliflower.

    To prepare the sauce, heat the butter in a pan over a low/medium heat. Mince the garlic and add to the pan, sweating until tender. Add the cream cheese, stock and nutmeg. Stir well to combine. Bring to a simmer until the cream cheese has melted and you have a smooth sauce. Add half the grated cheese and stir into the sauce until smooth and thick.

    Pour the sauce over the chicken, bacon and cauliflower and scatter over the remaining grated cheese.

    Transfer to the oven to bake for 20-25 minutes until cooked through, bubbling and golden.

    Loved it! Only gave it one less star because it did take a bit longer than what I would have expected and I would make adjustments to some of the ingredients and processes. I used frozen cauliflower rice to cut down on prep, and it made the texture very satisfying like a casserole. I did not like cutting the bacon prior to cooking, this made it take a lot longer flipping each small piece to get an even cook. Next time I will just cook the full strips of bacon and chop after. Last modification: I used chicken bone broth and added about 1/2 teaspoon of homemade bouillon seasoning (courtesy of chat GPT).

      Although it was tasty the prep time was longer than stated. There’s lots of chopping up cauliflower & chicken plus making the sauce.

              Great recipe as is! Hearty & filling. Since I am doing more protein so made a few mods the 2nd time around - this is very similar to a recipe I use for cream sauce: + Increased chicken to 1.5 lb - No need for adding oil to a pan when cooking bacon (I used pre-cooked that was well drained of the grease) - Substituted ricotta for cream cheese + Added 1T nutritional yeast into sauce + Use bone broth which does have a higher protein (& fat) content

                  This recipe is very good, I used block cream cheese, and added mushrooms. My only criticism with this recipe is the servings. It is 6 servings, all day long, not 4. If I personally ate a portion of "4" servings, I wouldnt be able to move. The recipe allows you to change and save the amount of servings, but lies to you and won't save it as 6.

                    Delicious! I omitted the chicken and substituted it with fresh zucchini. Also, used garlic powder as a seasoning for veggies. Tastes very good! The bacon bits on top gave it a nice touch. I’m not sure how to change the ingredients so that my macros reflect changes I made.

                      Delicious. I used onion and chive cream cheese spread. I added package of ranch seasoning. Also mushrooms as recommended. I omitted nutmeg.

                        Tasty, filling and easy to make. When browning the chicken I would make sure I drained the water, and add a little butter to brown the chicken a bit more? Also keep forgetting to add salt & pepper!! Also the sauce was a little runny, need to work out how to thicken it?

                          Also make sure to let sauce heat long enough to reduce, and to drain cauliflower really well before adding the rest of the ingredients.

                        I made this and it was delicious. I also cooked bacon first then chicken as someone recommended. I used jalapeño cream cheese spread and added another cup of cheese. Will definitely make again.

                          This was really good! I changed it slightly. I cooked the bacon first, then the chicken in the same pan, then a small onion. I only had a whipped garlic and herb cream cheese so that's what I was using. I didn't use nutmeg since I used the garlic and herb cream cheese. I baked it at 380 then broiled it to brown the cheese on top. My husband loved it! Said he can eat this on a regular.

                                  Oh my goodness! Too delish for me & dangerous. lol. When cooking my chicken when it was almost finished I added 5 large cloves of garlic which I had minced. Also added spices: Chipotle & Tandoori Masala. I used the Nutmeg but couldn’t taste it. It was a lovely flavor. My cheese I changed from cheddar to Colby but not Colby Jack. Just Colby & oops, I doubled it. 😂. I used the frozen bag of diced cauliflower from Costco & just dumped it in my bow to mix with meat & then the sauce before putting it in a buttered glass Pyrex dish to brown the bottom. Yes, my friend, Holly always says I change the recipes. This was so delish my non-Keto husband loved it. Of course now he wants to change the recipe to fit him. We let it rest while we ate our salads. It stayed hot! Will reheat tonight in air fryer for hubby! Delish and Keeper recipe! 👍🏼

                                    After reading the comments, I made sure to season my chicken the way I like. I also added curry powder and to give it a little zing, I added a little cayenne pepper. It was good minus the bacon. But I know I don’t like bacon in my dishes because it overpowers the other flavors of the dish. I wanted a deeper dish so maybe next time I’ll use 2 heads of cauliflower instead of one.

                                      Decent recipe but there is absolutely no seasoning. Only thing is a few slices of bacon and a garlic clove. Had salt to water for cauliflower. Added Adobo to the chicken. A bit of salt and pepper to the cheese. You have to add flavor to food.

                                      Echoing the years of praise this recipe has got. I spiced more, including adding some dry mustard. Will make again. I am curious about the calories for this. Hard to believe 4oz is 600! That’s a very small serving.

                                          This is delicious! A few tweaks! All cheeses (cream and cheddar) were reduced fat version, cheddar cheese I mixed mild and sharp and added an extra 1/2 cup, added season to meat and cauliflower, reduced the meat portion slightly (I didn’t have that much left!), added an extra cup of cauliflower, no bacon, no olive oil, and I used cream of chicken instead of broth! 😬… I also forgot to cook the fresh cauliflower first but it still came out perfectly! Thank you for this recipe, even my non Keto husband thought it was delicious.

                                                Yes. I put into individual servings. I also cut back on the cooking time of the cauliflower so when its reheated its not overcooked

                                                Made this for the first time. Yum! Non-low carb hubby also ate and enjoyed. Had to sub about 1:4 cream instead of cream cheese (to make 2 servings) as I discovered the cream cheese had spoilt when I went to use it. Will try with the cream cheese next time, and there will be a next time!

                                                  I want to make this and want to understand serving size. About 45 oz goes into recipe which serves 4, yet serving size says 4.1 oz. What is up with that?

                                                    I think the reduction that happens during cooking will negate some of the difference in weigh. When I cook a pound of meat, it usually weighs about 12 ounces after cooking. and evaporation will happen to the broth and veg. When I make casseroles, I enter the ingredients into the app as I have them available. Then I divide the casserole into the number of servings I think it should be, 4, 6, or 8. At that time you could weigh a serving if that is important to you. You could also compare pre cook weight per serving, to served weight. For this recipe, cut into 4 servings, I’d expect total weight to go down to 36 ounces, or 9 ounces per serving. 3.5 ounces for meat, 3 ounces for veg and 2.5 ounces for cheese and sauce ingredients. I agree, 4.1 oz would be way to light. Now, why are you worried about the weight of the servings? If I weigh ingredients going in, I use those macros divided by final servings to determine nutrition. I have never weighed casserole servings, I weighed out my Thanksgiving turkey serving. Then I weighed out left over turkey I put intto a casserole. But I did not weigh casserole servings, I just divided it evenly for portion control.
