  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Heat a tablespoon of olive oil in a frying pan over a medium/high heat. Dice the chicken, add to the pan and cook through until browned all over. Remove from the pan and set aside.

    Whilst the chicken is cooking, add the cauliflower to a pan and cover with water. Bring to a boil and simmer for a few minutes until just tender. Drain the water and set aside.

    Add the remaining oil to the frying pan and roughly chop the bacon. Cook until browned all over then arrange in an oven dish along with the chicken and cauliflower.

    To prepare the sauce, heat the butter in a pan over a low/medium heat. Mince the garlic and add to the pan, sweating until tender. Add the cream cheese, stock and nutmeg. Stir well to combine. Bring to a simmer until the cream cheese has melted and you have a smooth sauce. Add half the grated cheese and stir into the sauce until smooth and thick.

    Pour the sauce over the chicken, bacon and cauliflower and scatter over the remaining grated cheese.

    Transfer to the oven to bake for 20-25 minutes until cooked through, bubbling and golden.

    After reading the comments, I made sure to season my chicken the way I like. I also added curry powder and to give it a little zing, I added a little cayenne pepper. It was good minus the bacon. But I know I don’t like bacon in my dishes because it overpowers the other flavors of the dish. I wanted a deeper dish so maybe next time I’ll use 2 heads of cauliflower instead of one.

      It was delicious! I added curry powder and a little poultry seasoning and paprika. I only had a gouda type Kerry gold cheese.

        Delicious recipe. Next time I will add mushrooms, chopped onion, etc. I give the recipe a chance before I tweak it! Great flavor as is. Highly recommend this one.

          Yup, mushrooms was the first thing that crossed my mind. I thought "Ah, something to do with chicken and those mushrooms I've got that won't be another Stroganoff". Mind you, now I'm thinking that some nice warming mustard in the mix would go down well.

        Decent recipe but there is absolutely no seasoning. Only thing is a few slices of bacon and a garlic clove. Had salt to water for cauliflower. Added Adobo to the chicken. A bit of salt and pepper to the cheese. You have to add flavor to food.

            Echoing the years of praise this recipe has got. I spiced more, including adding some dry mustard. Will make again. I am curious about the calories for this. Hard to believe 4oz is 600! That’s a very small serving.

                This is delicious! A few tweaks! All cheeses (cream and cheddar) were reduced fat version, cheddar cheese I mixed mild and sharp and added an extra 1/2 cup, added season to meat and cauliflower, reduced the meat portion slightly (I didn’t have that much left!), added an extra cup of cauliflower, no bacon, no olive oil, and I used cream of chicken instead of broth! 😬… I also forgot to cook the fresh cauliflower first but it still came out perfectly! Thank you for this recipe, even my non Keto husband thought it was delicious.

                      Yes. I put into individual servings. I also cut back on the cooking time of the cauliflower so when its reheated its not overcooked

                    This recipe is good! Although I did add some salt and pepper due to the fact that cauliflower is very bland. Otherwise EXCELLENT meal!

                      Made this for the first time. Yum! Non-low carb hubby also ate and enjoyed. Had to sub about 1:4 cream instead of cream cheese (to make 2 servings) as I discovered the cream cheese had spoilt when I went to use it. Will try with the cream cheese next time, and there will be a next time!

                        I want to make this and want to understand serving size. About 45 oz goes into recipe which serves 4, yet serving size says 4.1 oz. What is up with that?

                          I think the reduction that happens during cooking will negate some of the difference in weigh. When I cook a pound of meat, it usually weighs about 12 ounces after cooking. and evaporation will happen to the broth and veg. When I make casseroles, I enter the ingredients into the app as I have them available. Then I divide the casserole into the number of servings I think it should be, 4, 6, or 8. At that time you could weigh a serving if that is important to you. You could also compare pre cook weight per serving, to served weight. For this recipe, cut into 4 servings, I’d expect total weight to go down to 36 ounces, or 9 ounces per serving. 3.5 ounces for meat, 3 ounces for veg and 2.5 ounces for cheese and sauce ingredients. I agree, 4.1 oz would be way to light. Now, why are you worried about the weight of the servings? If I weigh ingredients going in, I use those macros divided by final servings to determine nutrition. I have never weighed casserole servings, I weighed out my Thanksgiving turkey serving. Then I weighed out left over turkey I put intto a casserole. But I did not weigh casserole servings, I just divided it evenly for portion control.

                          This meal is a WINNER!! The only thing I added was a drizzle of buffalo wing sauce on top. Whole family loved it!! My pickiest eater said “10 out of 10”!! And that is a saying something because she’s a picky eater.

                            I actually have not tried it yet. It says 5 minutes prep and 1 serving. From other reviews, prep is a lot more than that. It is definitely not 1 serving. How many servings is there in this recipe? I’d like to know if I make it for a dinner party. Thanks

                              What is there to prep? Slice the bacon, smash the garlic. I’d buy frozen chicken already chunked, or use leftover chicken I had already chopped. I guess I do t count getting out ingredients and measuring them.

                              Depends on what they call prep. Getting it out of the fridge and pantry, yeah, 5 minutes. It just took me 45 minutes to get it in the oven. To be fair, I'm 74 and took 2 breaks. Someone who can prep through could probably have it in the oven in 30. My chicken was already cooked, thighs and legs, but still on the bone, so no real time difference there. Used prosciutto, so no bacon to cook. Didn't buy shredded cheese for a change, grated it. That is a trial this body failed. All in all, I take times with several grains of salt. Most of us are not the Hostess with Mostess or Top Chef candidates. If this is a dish in your meal plan, 1 serving is probably referring how many servings to eat fir that meal.

                              I think it would be a great recipe for a slow cooker. Just brown the meat with the garlic and bacon. Then add everything else. I think I would miss the bubbly cheese browning a little in the oven. I’m not sure if the liquid would give you the sauce you’d get in the oven.

                            My husband loves this Keto chicken and cauliflower receipt. I thawed the pre-cooked chicken breasts overnight, and I roasted the cauliflower in the Cosori. That saved me a lot of time.
