  • Skinless Chicken Breast

  • Prosciutto

    Prosciutto

  • Brie Cheese

  • Cranberries, Fresh

    1-½ tablespoon, whole pieces

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit. Roughly chop the brie and finely slice the rosemary. Add to a mixing bowl along with the cranberries and a pinch of salt and pepper. Mix together so that the cheese and cranberries are well seasoned.

    Slice a pocket into the side of each chicken breast, taking care not to cut all the way through.

    Divide the cheese and cranberry mixture evenly between each chicken breast, stuffing the center of each.

    Tightly wrap each breast with a slice of prosciutto.

    Transfer to the oven to bake for 23-25 minutes or until the chicken is completely cooked through and the ham is golden.

    I read the review and thought maybe I won’t make it. But wanted to give it a try. It was perfect! I seasoned the chicken with garlic powder onion powder salt and peeper. I used can whole cranberries. Some of the cheesy goodness came out of chicken but what was left was good!

      This was good...I over cooked it though...I’d shorten the time about 5 minutes if your chicken is thinner.

        It is extremely tasty and juicy . I didn’t have cranberry so I just staffed it with cheese .. I honestly love it and my hubby too . He is happy for my diet cause he is trying new things 😉

        Really tasty and juicy. I used 2 slices of prosciutto per chicken breast. I cooked for 30 minutes the breasts were a little large. Loved the brie and rosemary combination.

          Well, I didn’t like it that much. It was dry and needed more flavor. I cooked it for 25 min but not leaving it in that long again. Maybe my chicken breasts were smaller than the one showing for this recipe. Anyways, needs more flavor...

            You have to bake these for at least 45 min to an hour for an electric oven. At 25 minutes they were still raw. Will update later after they are done

              Fresh cranberries are difficult to get. Would frozen cranberries or blackberries work?

                Hi, frozen should work just as well. You may need to thaw them first so they don't release excess liquid though.

              Turn out very good but had to adjust the time and temperature for the altitude that I was at, Because 10000' above sea level changes everything when you cook

                I found the cranberry’s to taste bitter and not sweet. Any way to used craisans instead?

                  Craisins are sweetened with sugar which technically makes them not keto but I think it’s up to you what “cheats” you’re willing to do for taste factor. There are many different brands of dried cranberries, im sure ocean spray craisins probably have the most added sugar so maybe just check different brands for a lower count or no sugar added?

                1.5 tblsp of cranberries does not sound like enough fir 4 breasts, or is it 1.5 tblsp per breast?
