  • Step 1

    Make the hollandaise sauce first. In a bowl, whisk together the egg yolks, water, and lemon juice until frothy.

    Create a double boiler by placing your bowl over a pot filled with 1 inch of water at a simmer. Continually whisk the bowl of egg yolks over the simmering water until it bubbles around the edges and thickens. You’ll feel the egg yolks thicken while you whisk.

    Whisk in the salt, paprika, and cayenne. Whisk the butter into the bowl, melting just 1 TB at a time. Again, continually whisk until the sauce becomes thick and doubles in size. Take the bowl off the simmering water and set it aside to cool and thicken.

    To make the eggs, heat the olive oil in a medium sized pan over low heat. Crack two eggs in the oil. At your discretion, you may add salt and pepper, but remember the sauce will add a lot of flavor.

    Leave the eggs undisturbed as they fry in the oil. Place a lid over the pan to trap the heat and cook the eggs. Cook about 4-5 minutes, low and slow, to cook the eggs to a medium doneness with crispy edges.

    To serve, ladle 3 TB of hollandaise sauce on a plate and place 1 egg on top. Garnish with additional sauce and paprika.

      This is one of my favorite breakfasts! I use nutmeg instead of paprika (old Atkins recipe) To note: calculations given are for ONE egg and you are making two, so be sure to add in an extra fried egg on your calculator when you make this!

        What is the actual amount of sauce that is calculated into the nutrition facts? Is it four Tbsp? It says place 3 Tbsp.On plate, then add more on top eggs. How much? It’s not specified in the directions.

          I think it means “use the remaining sauce on top.”

          Faster way to make hollandaise. Use a blender. Zap all ingredients except butter. Heat butter in microwave till very hot then trickle in with blender running. Works great and much easier
