Sooooooo delicious and easy! This is going to be a new staple in my diet even after keto. To make it even easier on myself I just threw the zuchinni boats in my air fryer at 380 for roughly 7 min on each side with some avocado oil rubbed on them. Turned out great. Next time I'm going to try cutting the zuchinni into bite sized pieces and make it into more of a salad type dish. Flavors are wonderful though any way you make it. The mint was a surprising delite.

Oh my!!! This was sooooooooo good. Because I needed some more fat and protein due to being on the run today, I browned up some ground beef and seasoned it. I added the browned meat and some guacamole over the zucchini boats and covered it with the feta and olives. I heated the pine nuts while cooking the green sides of the zucchini. Y’all, this will be a favorite for sure!!!!!
