Ingredients
Salmon, Canned, Pink, Without Salt, Drained
4 ounce
Mayo
3 tablespoon
Snack'mms Kosher Dill Pickles by Vlasic
2 pickles
Onion
2 tablespoon, chopped
Baby Spinach
1-½ cup, cut pieces
Extra Virgin Olive Oil
1 teaspoon
Apple Cider Vinegar
1 teaspoon
Hard Boiled Egg
1 large
Recipe Steps

Step 1
Add canned salmon and mayo to a medium mixing bowl. Dice the pickle and onion and add that as well.Step 2
Mix well. In the meantime, prepare the greens by topping the with olive oil, vinegar and a sprinkle of salt.Step 3
Top the greens with the salmon and add a hard boiled egg to the side of the plate. Sprinkle the egg with salt and pepper, if desired. Serve cold!

Mayo has egg. I would substitute with avocado or Greek yogurt or hummus. I know yogurt will taste good.

Since the egg is just hardboiled on the side, I would say that it wouldn't ruin the recipe to.

Under the gun time-wise and this recipe got dinner to the hungry hubs in a quick snap. Used the Instant Pot to boil the eggs and they were ready before the rest of the salad was! Easy, cool, refreshing on a hot summer night. Sliced tomatoes and green onions on the side would be good too. Thanks for the recipe.

Was easy to make but I’d cut down on the mayo. The meal itself tasted just ok, I was put off by the look of it.
