Chunky skirt steak is combined with bell pepper and two cheeses before drowned in a creamy egg batter. A little bacon on top never hurt anyone either!

    Lay out a skirt steak flat and cut it into manageable pieces, if necessary. Season with the first amounts of salt and pepper, the onion powder, garlic powder, and paprika.

    Heat the olive oil in a large skillet over high heat. Place in the steak and cook for 7-8 minutes per side, depending on the thickness of the steak. For this recipe, the steak will be best enjoyed at a medium-well to well done. You may slightly undercook the steak, since it will be finished off in the oven later. Set the steak aside to rest when done.

    Preheat an oven to 375 degrees. In a bowl, whisk together the eggs, cream, and second amounts of salt and pepper. Set this aside.

    Spray a standard 9x13 baking dish with pan spray. Chop the steak into bite-sized pieces and arrange in the bottom of the dish. Dice the red bell pepper and sprinkle this on top. Follow with the cheddar and mozzarella cheeses.

    Pour the egg batter over the casserole. Place the dish in the oven and bake for 20 min. While the dish is baking, cook the strips of bacon on the stove to a crisp. When done, cool the bacon and chop it into bits.

    After the 20 minutes in the oven, remove the casserole and reduce the oven to 350 degrees. Sprinkle the bacon bits on top of the casserole and bake for a final 10 minutes. You may bake longer if your egg is still wet in the middle. Slice into 6 slices for serving.

    This is so good! I swapped peppers for sliced white mushrooms. My meat was med rare and cooked through in the oven but egg wasn’t completely done so I added 10 min. My oven seems to cook slower so I wasn’t surprised by that. I’m going to freeze some portions to see how it does with reheating etc. Definitely will make this again!

      For variety I replace the onion and garlic powders with Kinder’s Fajita Blend Seasoning and replace the mozzarella with Cojita cheese. A fav at family potlucks.

            Sooo yummy!!! I recommend splitting the meat and cooking on medium. Then cut into smaller than “bite size” pieces otherwise you are chewing for a while and not in the good way. 😉
