Step 1
Preheat your oven to 350 degrees Fahrenheit. Place the chicken breasts on a cutting board and butterfly them (slice ¾ of the way horizontally)—season with salt and pepper on both sides. Add 1 Tbsp of olive oil to a non-stick skillet, and place over high heat. Cook the chicken breasts for 2-3 minutes on each side until golden, then transfer them to a plate.Step 2
Rest the chicken breasts for 5 minutes, chop them into 1-inch cubes, and add them to a bowl. Mix in the cream cheese, ¼ cup of shredded cheese, and ½ tsp each paprika, cumin, and oregano. Taste and adjust seasoning, set aside.Step 3
Place the skillet over medium-high heat, and drizzle 2 tbsp of olive oil. Add the onions and cook them for one minute. Add the red bell pepper, green bell pepper, 1 tsp paprika, ½ tsp cumin, ½ tsp oregano, ¼ tsp black pepper, and ¼ tsp salt. Cook for 2-3 minutes.Step 4
Transfer the chicken mixture to a medium-sized casserole dish, and distribute it evenly. Spread the cooked onions and peppers over the chicken. Finally, sprinkle ¾ cup of shredded cheese on top.Step 5
Bake for 25-30 minutes, or until the cheese is golden and bubbly. Let the casserole cool for 10 minutes. Garnish it with sliced avocado, coriander leaves, and sliced jalapenos. Serve immediately.

This for sure doesn’t make 4 servings. By itself, maybe 2, but you can squeeze 3 meals out of it with some other sides. A casserole dish is far too big. I fit the whole thing in a bread tin. Double the portions if you want a full casserole.

Tried this tonight and we loved it! I wrapped my portion in a low carb tortilla and topped it with salsa and sour cream. Yum!

I like the simplicity of this recipe. I only used 1T oil as I cubed the chicken while partially frozen. The pieces cooked up fast. Then cooked the remaining onions and peppers in the same oil. The cumin will be decreased in future meals. I did add 4 ounces of Ortega diced chiles Nummy

This was delicious and easy to make. I shrunk it down to 1 serving and cooked it in a tiny casserole dish. The only thing I might switch up next time is to try shredded chicken so it becomes part of the cream cheese mix rather than covered in it.

Delicious, all the family enjoyed this dish however I doubled the recipe. I weighed out 195g for myself and there was just enough for 3 other hungry adults who added wraps to it. The original portions would defo not feed 4 people.

This has become a weekly staple for me. I don’t like peppers so I substitute with crimini mushrooms and zucchini. I also make it dairy free using daiya cheese and dairy free cream cheese. It’s fantastic!

My son is not on Keto; however is eating healthier. He loves this. He asked me to safe the recipe. I did add 1/2 tablespoon of sour cream for him. I also loved this dish. Can't believe how I can eat like this and still lose weight.

This recipe is a weekly staple in our home! My husband (who isn’t strictly keto) has said this is his favorite keto recipe I’ve made so far. Definitely a smaller portion but very filling!
