  • Step 1

    Preheat your oven to 350 degrees Fahrenheit. Place the chicken breasts on a cutting board and butterfly them (slice ¾ of the way horizontally)—season with salt and pepper on both sides. Add 1 Tbsp of olive oil to a non-stick skillet, and place over high heat. Cook the chicken breasts for 2-3 minutes on each side until golden, then transfer them to a plate.

    Rest the chicken breasts for 5 minutes, chop them into 1-inch cubes, and add them to a bowl. Mix in the cream cheese, ¼ cup of shredded cheese, and ½ tsp each paprika, cumin, and oregano. Taste and adjust seasoning, set aside.

    Place the skillet over medium-high heat, and drizzle 2 tbsp of olive oil. Add the onions and cook them for one minute. Add the red bell pepper, green bell pepper, 1 tsp paprika, ½ tsp cumin, ½ tsp oregano, ¼ tsp black pepper, and ¼ tsp salt. Cook for 2-3 minutes.

    Transfer the chicken mixture to a medium-sized casserole dish, and distribute it evenly. Spread the cooked onions and peppers over the chicken. Finally, sprinkle ¾ cup of shredded cheese on top.

    Bake for 25-30 minutes, or until the cheese is golden and bubbly. Let the casserole cool for 10 minutes. Garnish it with sliced avocado, coriander leaves, and sliced jalapenos. Serve immediately.

        Delicious, all the family enjoyed this dish however I doubled the recipe. I weighed out 195g for myself and there was just enough for 3 other hungry adults who added wraps to it. The original portions would defo not feed 4 people.

                                                        Quadrupled the recipe which was a hit at a recent family gathering. A few changes I made were cutting the uncooked chicken into smaller strips and coating with most of the spices, plus a tsp of my favorite (0-carb) organic Spicy Grilling Seasoning, allowing the strips to “marinate” for about a half hour while cutting and browning the onion and red, orange and yellow pepper strips in olive oil with the remaining spices on high heat until they were well browned, yet still fairly firm. Giving the chicken strips a good browning on all sides I think, also adds to an enhanced flavor of the meat. For the cheese, I used half Cojita and half sharp cheddar.

                                                            As I'm enjoying this for lunch today I decided it's worth taking time to give it a review. First of all it's so easy to make and it taste delicious. I added Jalapeno sauce to kick up the heat.
