Nobody can resist the temptation of a sinfully delicious deviled egg. Of course, most recipes call for mayonnaise or a heaping ton of mustard and other sugary emulsifiers. With the perfect amount of dijon mustard and greek yogurt, you can still have a delightfully tangy and soft breakfast or snack. The deviled egg filling in this recipe is slightly more firm than what you may be used to, but it’s still smooth and satisfying.

Ingredients

  • Bacon

    Bacon

  • Hard Boiled Egg

    Hard Boiled Egg

  • Dijon Mustard

    Dijon Mustard

    1 tablespoon

  • Greek Yogurt

    Greek Yogurt

    1 tablespoon

  • Spices Paprika

    Spices Paprika

    ⅛ tsp

  • Spices Onion Powder

    Spices Onion Powder

    ¼ tsp

  • Parsley Raw

    Parsley Raw

    ½ tbsp

  • Step 1

    Cook the slices of bacon in a skillet until very crispy. Set the slices aside to cool. Then, chop them into very tiny pieces. Save the diced bacon for later.

    Slice each hard boiled egg in half and scoop the yolks into a bowl.

    Use a spoon or fork to mash the yolks as finely as possible. Combine the yolks with the dijon mustard, yogurt, paprika, and onion powder. For a smooth mixture, you can do this process either in a food processor or in a ziploc bag. Fold the chopped bacon bits in at the final stage of mixing.

    Pipe the finished filling into each egg half. For the best look, use a pastry bag with a large cupcake icing tip. Otherwise, simply fill a ziploc bag and cut a corner to pipe the filling. Garnish the eggs with additional paprika and fresh parsley!

    Very good i added 1/4 avacado. I deleted the bacon. So how do you figure out the net carbs nutrition?

              Today is my first day of keto and this was my first meal. As others have said, as written it would be dry and crumbly. I added just a tad more Greek yogurt and it was great. So a little higher protein and fat. I’m suspicious of the accuracy of the macro calculations as the fat content of the bacon can be highly variable. In sum, it was tasty and highly satisfying.

                I have 3 x 4 halves...is that six egg total? Just new to this meal plan, not totally understanding the serving sizes

                  Total whole eggs in the ingredients are 6. After hard boiling them, you cut each one in half giving 12 egg halves. Total servings are 3 at 4/halves each. So one serving would be 4 halves or 2 whole eggs. Hope this makes sense... :)

                        It depend on your daily intake of kcal. recipes need to be divided. for example I have 1serving of this eggs 4halves on my 1500 kacl daily limit
