Keto Jalapeno Popper Chicken Salad

6 ratings

This recipe for jalapeno popper chicken salad can serve as a hefty side dish or can be a component to your lunchtime meal. You can use precooked chicken for this recipe if you’re in a pinch, but you will be far more satisfied with the seasoned, blackened chicken breast used here. You can taste the classic Tex-Mex spices: cumin, paprika, and a little heat. Enjoy the crunch of fresh jalapeno, a Mexican-style blend of cheese, a splash of lime, and the tangy and cooling effects of cream cheese. This is a delicious way to enjoy a crowd-favorite snack while keeping your low carb diet intact. Serve cold if you want the spice of your jalapeno to stay mild, or you can serve warm as a dip or scooped between two pieces of your favorite Keto bread as a sandwich. Enjoy the comfort food flavors at your next Keto barbecue or summer meal on the patio.

Why Chicken Salads Are The Ultimate Keto Recipes

Not only are chicken salads a delicious way to use leftover chicken, but this American retro side dish is conveniently keto almost any way you make it. When you’re making the salad, you can easily alter the amount of protein you add (the recipe here uses only about 3 oz chicken per serving). The other wonderful thing about chicken salad is it is typically made with mayonnaise: one of the underdogs of a successful keto diet. Load up on the mayo and flavor it with your favorite seasonings, low carb condiments, and chopped keto veggies. Your options are seemingly limitless with chicken salad.

This was very good and easy to make. Did the chicken breasts in the Instant Pot. Then shredded the meat mixed it all up together.

This is excellent. Today I made it again. It reminds me of stuffed jalapeños to a certain extent.

This is sooooo good and simple. I cook meat in instant pot for several meals requiring cooked chicken. I use rest of chicken on fat head pizza and in egg muffins. I’m the only keto in my house. This makes work meal planning simpler!
