Hearty, warm, and absolutely delicious is what this Keto beef stew is. It is an easy recipe that takes 15 minutes of active cooking and prepping. The crockpot will then do its thing, and you’ll end up with a flavorful stew with meat that melts in your mouth. We guarantee you this is one of the best Keto meal prep ideas out there.

We have also added a quick and easy cauliflower mash recipe to go with the stew. You only need to boil the cauliflower for 10 minutes, then blend it with butter and seasoning. This cauliflower mash pairs well with the Keto beef stew and is an excellent carrier for the thick, flavorful sauce.

This low-carb stew is a perfect crockpot Keto meal prep recipe because it allows you to cook a large batch with no extra effort. You can double the recipe, serve half of it at dinner, then meal prep the rest. Believe it or not, this meal tastes better the next day.

We have also added a secret ingredient that replaces potatoes in a traditional beef stew. This ingredient is celery root. It is a Keto-friendly ingredient that tastes similar to potato and looks just like it. You can easily fool anyone by using this low-carb vegetable.

Do you have to sear the meat before adding it to the crockpot?

Well, the meat will still cook all the way through if you don’t sear it. However, for this Keto meal prep recipe, we highly recommend not skipping this step. Caramelizing the beef adds a fantastic flavor and texture to the dish.

How to thicken the stew's sauce?

A big part of this stew is its sauce. It carries all the great juices from the meat and vegetables. To thicken it, we recommend adding xanthan gum at the last 15 minutes of cooking. If you don’t have this ingredient, then you can skip this step. The sauce will taste just as good but will be soupy.

    Place a cast-iron skillet over high heat and drizzle the olive oil. Add the beef cubes and spread them into one layer. Let them sear for 4-5 minutes per side until browned on both sides. Transfer the beef to the crockpot and pour the beef stock into the skillet and scrape the caramelized remainings.

    Chop the onion and carrot, cut the celery root into 1-inch cubes, mince the garlic and add them to the beef. Add the diced tomatoes, 1 tsp of salt, ½ tsp of pepper, thyme sprigs, and bay leaf. Pour the beef broth from the skillet, and mix everything.

    Cook the stew for 3-5 hours on high heat or 6-8 hours on low heat. At the last 15 minutes of cooking, mix the xanthan gum with 1 tbsp of water, then add it to the stew. Give it a stir and let it finish cooking. Take the bay leaf and the thyme sprigs out, and taste to adjust seasoning if needed.

    While the stew is cooking, prepare the cauliflower mash. Boil the cauliflower for 10 minutes until very tender. Strain the cauliflower in a colander and press to squeeze out excess water.

    Transfer the cooked cauliflower to a bowl. Add the butter, ¼ tsp of salt, and 1/8 tsp of pepper. Using a hand blender, blend the cauliflower until smooth.

    Portion out the cauliflower mash into 4 microwave-safe containers and spread. Divide the beef stew into the containers, and sprinkle with the chopped parsley. Let the food cool completely, then secure the lids and transfer the containers to the fridge. When ready to serve, microwave one container for 1-2 minutes, or until warm.

    Can I use and equal amount of celery in place of celeriac root?

      Celery has a stronger flavor than its root, it might be a bit overpowering but you can use it if you don't mind the strong celery flavor. r you can leave it out, the stew will still be delicious :)

    Delicious and hearty! Started my stew slow and low in the morning for dinner that evening. I also added 5 oz of fresh yellow squash and a tablespoon of tomato paste to thicken it up vs. the xanthan gum. I did not want my cauliflower ‘mashed’ so I added the florets to the stew. I want to thank you for this recipe, I honestly love it!!!
