Keto Air Fryer Banana Bread Mini Loaves

These air fryer Keto banana bread loaves provide all the flavor and texture of a classic banana bread-minus the carbs. Prepared from a batter of low carb flours, the Keto banana bread mixture is divided into mini loaf moulds suitable for air frying. These sweet Keto loaves make a great snack option or post dinner dessert.

Keto Air Fryer Banana Bread Ingredients

These Keto air fryer banana breads are prepared with a batter of ground almonds, coconut flour, eggs, low carb sweetener, almond milk, baking soda, a little lemon juice and butter. To provide the sweet taste of banana - guilt free - we have flavored the cake batter with banana essence. Once the bread batter is prepared it is divided between mini silicone loaf moulds ready to be air fried.

Keto Air Fryer Banana Bread Tips

We have used mini silicone loaf moulds to cook our Keto banana breads. If you prefer to use metal or glass loaf tins that are suitable for you air fryer, please note you may need to adjust your cooking times. We have used two teaspoons of banana essence to flavor our loaves. Please feel free to add more or less to suit your tastes and depending on the strength of your banana essence.

  • Step 1

    Add the ground almonds, coconut flour, erythritol, baking soda and salt to a large mixing bowl. Stir everything together until well combined.

    Add the melted butter to the mixing bowl. Add the lemon juice and banana essence (adjusting as needed to taste). Mix everything together well to combine so the wet and dry ingredients start to bind.

    Crack the eggs into the mixing bowl. Beat the mixture together well until thoroughly combined. You should have a thick cake batter.

    Slowly drizzle the almond milk into the mixture a little at a time. Keep beating the mixture together until the milk is fully combined and the batter is smooth. The batter will still be quite thick but easily scoop-able.

    Divide the loaf batter evenly between 4 mini silicon loaf moulds suitable for an air fryer. Place two of the filled loaf cases in your air fryer basket. Set the basket in the air fryer.

    Set the temperature to 325 degrees Fahrenheit and the timer for 25 minutes. After this time, the loaves should be golden, risen and cooked through. If not, return to the air fryer to cook a few minutes more as needed. Set the loaves to one side to cool completely whilst you repeat the cooking process with the remaining loaves.

    I dont have an airfryer or mini loaf pans. I guess maybe muffin tins would work. How long & hot should i bake it in the oven?

      I did make this but mine came out mushy not sure where I went wrong even put it back in the Air Fryer for an additional 35 minutes and still was mushy.. please let me know where I went wrong. Thank you
