Keto Carnivore No-Churn Vanilla Ice Cream

Even on the carnivore diet you can treat yourself to delicious guilt-free ice cream! This Keto carnivore recipe is easy to make and no churning is required. Egg yolks are added to the cream, vanilla, and sweetener in a saucepan and brought to a gentle simmer to thicken. This carnivore diet recipe is then chilled and poured into food-grade safe silicone ice trays and frozen overnight. Blitz a few cubes in a powerful blender until smooth and creamy and serve straight away! If your diet permits it, don’t skip out the vanilla extract and Keto-friendly sweetener when making this carnivore diet ice cream recipe, it brings out the cream flavor and satisfies that sweet craving!

Are sweeteners allowed on the Keto carnivore diet?

While strict zero carb carnivores do not add any sweeteners to their diets, Keto carnivores however may include some plant-based fats, flavorings, and sugar-free alternatives. Some Carnivore dieters argue that honey is permissible as it comes from the animal kingdom, however the sugar content in honey will spike blood sugar levels if following a strict Keto diet. Powdered erythritol is used in this recipe as it dissolves faster, however, if you only have granulated sweetener, ensure it has completely dissolved while heating the cream mixture before pouring into the ice trays.

Are there alternative cooking methods to make this recipe?

If you have an ice cream maker, make sure to stir the ice cream mixture well before pouring it into your machine. Churn the ice cream as per your machine's instructions and until thick and creamy. Serve immediately and transfer any remaining ice cream to an airtight container and store in the freezer.

If you don’t have an ice cream maker, simply pour the mixture into silicone mold ice trays and freeze overnight.

You can also make this the old-fashioned way by pouring the mixture into a plastic tub or loaf pan and placing it in the freezer. Make sure to stir the mixture every 30 minutes to avoid ice crystals. Scrape the sides and repeat until desired consistency.

How to store this ice cream recipe?

Once the ice cream cubes have fully frozen, you can keep them in the trays until needed but they may begin to frost on the tops if left exposed for long. For best results, remove each cream cube and transfer it to a freezer-safe container for easy access.

  • Step 1

    Separate the egg yolks into a medium bowl and reserve the whites for another recipe. Whisk the yolks thoroughly. Pour the cream into a saucepan set over medium heat. Add the egg yolks, vanilla extract, salt, and erythritol (if using) and whisk to combine.

    Bring the cream mixture to a gentle simmer, then reduce heat to low. Keep stirring until the cream has thickened slightly. Taste and make any adjustments, add more vanilla or sweetener according to your preference. Remove from the heat and allow the mixture to cool before transferring it to an airtight container. Chill in the fridge for at least 2 hours.

    Pour the mixture into silicone mold ice trays and freeze for 6-8 hours or better still, overnight. Keep these ice cream cubes in their trays or transfer them to a tub until you want an ice cream treat.

    When you want ice cream, just pull out a few cubes, place into a blender or food processor with 2-3 tablespoons of heavy cream, milk or water, and blitz until smooth and creamy. The additional liquid will help the mixture along as it blends.

    Slightly misleading to call this carnivore. I don't begruge any carnivore eating it, but vanilla is from plants. Still looks yum. Perhaps I will give it a go without sweetener.

      This recipe gives the option to include sweeteners if you wish :) Not all Keto Carnivores are as strict.

    Erythritol can cause allergic reaction in some cases. The symptoms vary depending on the person, but one is swollen eyelids. Anyone use another sweetie instead and works?

      avoid artificial sweeteners entirely. The point of low carb or keto is to train our bodies to not crave it. These sweeteners are not healthy. Check Dr Jason Fung on this or anyone else.

      Allulose causes no blood sugar/insulin response, it also keeps ice cream from becoming rock hard. In bread making it gives breads a beautiful brown color. It also carmelizes unlike so many sweetners. It is not measured 1-1 though. It is 70% as sweet as sugar - so you need to test to get the sweetness you want.

    I would like to know how was calculated the carbs - egg, whipping cream, vanilla extract, erythritol and salt? I believe this calculation of the nutrition is wrong, there is absolutely minimum of net carbs and no over 3 net carbs per one small portion.

      Hello - 1.5cups or 12.6oz (357g) of whipping cream alone contains 10g carbs. Unfortunately cream is not without carbs. I hope this helps to answer your question :)

      Maybe her whipping cream had Carbs? Hence the higher number

      You can subtract sugar alcohols from total carbs to obtain a net carb.
