    Place the chocolate chips in a heat-proof mixing bowl. Place it on top of a bowl of simmering water. Stir the chocolate occasionally until melted. Allow the chocolate to cool slightly as you prepare the eggs.

    Crack all the eggs into a large bowl. Separate the yolks from the whites by lifting each egg from the bowl and allowing the whites to fall through your fingers. Place the yolks into a separate bowl. Add the yolks to the cooled chocolate one at a time, making sure to beat each one in. The chocolate might seize up, but continue adding the yolks one at a time beating well after each addition. Once all the yolks are incorporated, add the vanilla and mix in. Set the bowl aside.

    Whip the egg whites until frothy. Then add the sweetener and beat on medium-high speed until the egg whites have formed stiff peaks. Beat (not fold) in ¼ of the stiffened egg whites into the chocolate mixture.

    Then add the remaining stiffened egg whites to the chocolate mixture, fold the mixture in carefully and gently so as not to deflate the whites. Divide the mousse into separate containers and chill in the refrigerator before serving.
