The most essential of recipes to accompany your roast dinner is of course, a Keto Christmas gravy! Onions are caramelized with fresh thyme, bay, red wine, and mustard and form the base of this rich and silky smooth Keto Christmas recipe. Perfect for family feasts, this gravy is a great accompaniment to roasts, pies, sausages, or any of your favorite festive dishes.

Are there alternative cooking methods? This is a vegetarian gravy recipe; however, if you have just made a roast chicken or roll of beef, all those delicious juices sitting at the bottom of your roasting tray can be deglazed with some water (or red wine) and then scraped into the pan with the onions.

How much gravy does this recipe make? This recipe yields 1-2 cups of gravy, depending on the consistency. If you like your gravy thick, it will most likely yield 1 cup. If you prefer a thin gravy, you will add more water to thin the recipe out, and this will therefore yield approximately 1.5 - 2 cups.

Can I substitute any ingredients for other diets? Typically Worcestershire sauce is not gluten-free, but you can use a gluten-free alternative in this recipe. Alternatively, omit this ingredient entirely.

Make this recipe vegan by substituting butter for a plant-based alternative.

Any stock of choice can be used for this gravy. Vegetable stock is what we have used to make this recipe vegetarian, but feel free to use beef or chicken stock. Just be sure to check the ingredients for hidden starches/ thickeners.

Can I make this recipe ahead? You can make this Keto gravy up to 3 days before you are ready to serve. Store it in an airtight container in the fridge. You can also freeze the gravy in large silicone ice tray blocks or a sealable bag for up to 2 months. First, allow the gravy to cool to room temperature before freezing. Thaw the gravy overnight in the fridge before re-heating in a saucepan to piping hot.

  • Step 1

    Finely dice the onions. Add the butter and oil to a pan set over medium heat. Once the butter has melted, add the onions and reduce the heat to low. Saute for 15-20 minutes until the onions are soft and caramelized. Stir intermittently to prevent from burning. Add the thyme sprigs

    Add the bay leaf and apple cider vinegar to deglaze the pan. Stir well and saute for a couple of minutes.

    Add the red wine to further deglaze the pan. Turn the heat up to medium. Add the vegetable stock, black pepper, dijon mustard and Worcestershire sauce (optional) and bring to a gentle simmer for 3 minutes for the flavors to amalgamate.

    Remove the pan from the heat. Transfer the gravy to a blender. Blitz on high until a smooth consistency.

    Return the gravy to the pan and set it over medium-low heat. Taste for seasoning. If your stock does not contain salt, you may wish to add ¼ teaspoon or, to your taste. If the gravy is too thick, add more water 1 tablespoon at a time to loosen it to your preference. Whisk well before transferring to a gravy boat before serving.
