Keto Spam Musubi

A quick and easy dish, Keto Spam Musubi is ready within 20 minutes. Tender and sweet cauliflower rice pressed and topped with crispy fried Spam coated in a sweet Teriyaki sauce. The ingredients for this recipe are convenient to keep on hand if you stock up on Spam, frozen cauliflower rice, and nori sheets. Use the less sodium Spam for this recipe (if not use light sodium soy sauce). This dish is both popular in both Hawaiian and Filipino/Tagalog/Pinoy cuisine! You may already be familiar with the non-Keto version.

Do I need any special equipment?

Yes, you will need to purchase a musubi mold, which you can find at your local Asian Market or at online retailers such as Amazon. They are very inexpensive.

What is the trick to get the nori sheets wrapped around the Spam?

To get the nori sheets wrapped around the Spam, place one strip of nori down on the plate first, then place the musubi mold on top of one end of the nori. Fill the mold with cauliflower rice, press it down using the mold, remove the mold, top with the crispy teriyaki coated spam, and then very gently tuck (and perhaps trim) the other end of the nori strip.

How do you make a Keto teriyaki sauce?

It is straightforward, in the same pan as the Spam was cooking in, add sweetener and soy sauce. A glaze will form in the pan that will gently coat all the Spam. It is quite delicious!

  • Step 1

    Prepare the frozen cauliflower rice by placing the entire bag of cauliflower in the microwave. Cook according to the package instructions, about 4 to 4 ½ minutes. Set aside. Take the nori sheet and cut it into 6 equal strips.

    Take one nori strip and place it on the plate. Most of the strip will be hanging off the plate. Place the musubi mold on top of one of the nori strips. Fill the mold with ⅙ of the cauliflower rice and use the press to tamp the cauliflower rice down. Do not press too hard to where the water is starting to be released from the cauliflower rice. Have all 6 of the shaped cauliflower rice ready to go.

    Cut Spam into 6 equal slices. Place in a cold, large nonstick skillet and place over medium heat. Allow the Spam to cook very slowly to allow it to get nice and crispy (this will take about 10 minutes on the first side). Turning the heat down to low if they are browning too quickly.

    Flip the Spam and allow it to cook for 8-10 minutes on the second side. Combine the soy sauce and sweetener in a small bowl. Once Spam is crispy add the soy sauce and sweetener that has been mixed together. Move around the Spam in the soy sauce mixture and cook for 1-2 minutes or until the soy sauce has thickened and has glazed the Spam.

    Place one piece of Spam on each of the cauliflower pieces. Lift each nori sheet and lay it on top of each Spam, trim and tuck the edge underneath the cauliflower rice. You may not be able to lift up the cauliflower rice to stick the other end of nori, but you can gently tuck it to get it to stick. Serve hot!

    My rice will not stick together it falls apart any suggestions?

      Xanthan powder and flax meal or fflax flour will have your rice sticky

      Add 2 tbsp of cream cheese to the rice and let it set for 45 min before you put it into the press
