  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  • Step 2

    Slice the bacon into 1.5 inch strips and arrange across the lined baking tray. Brush the syrup over the bacon pieces. Transfer to the oven for 10-12 minutes until crisp and caramelized.

    Whilst the bacon is cooking, add the eggs to a bowl, season to taste and beat together.

    Melt the butter in a saucepan over a low/medium heat and add the beaten egg. Allow to settle for a moment then scramble with a spoon.

    Once the egg is cooked, crumble in the goats cheese and bacon and stir through to serve.
