What is a bellini?

A traditional bellini is started with a fruit puree or syrup. Usually, bellinis are made with peaches. Then, it’s topped with Prosecco or some type of champagne. These ingredients are not Keto-friendly, so you’ll be making your own natural peach puree and using sparkling water instead of champagne.

Are peaches Keto?

If used sparingly and thoughtfully, you can enjoy this recipe on occasion without taking your body out of ketosis.

  • Step 1

Add frozen peaches, lemon juice, water, and liquid stevia to a pot on the stove. Simmer the ingredients with a lid on the pot until the peaches are soft enough to mash with a fork. Depending on how large your pieces of frozen peaches are, the cooking time may vary.

  • Step 2

Once the peaches are soft, pour all the ingredients into a blender or bullet blender. Blend the peaches and liquid until they’re pulverized into a puree. Allow the puree to cool entirely in your refrigerator before adding it to the bottom of champagne glasses - about 30 minutes.

After adding the peach puree to champagne glasses, fill each glass with approximately 6 ounces of sparkling water. Plain sparkling water is perfectly fine for this recipe to let the natural peach flavor stand out. Otherwise, you may use peach-flavored sparkling water to enhance the flavor.
