Ingredients
Ground Beef
8 ounce
Cauliflower Rice
2-½ cup, cut pieces
Scallions
2 small - 3" long
Cajun Seasoning by Spice Time
2 tsp
Celery
1 stick - 4" long
Chicken Broth, Bouillon Or Consomme, Homemade
1 cup
Olive Oil
1 tablespoon
Green Bell Pepper
½ medium - 2 1/2" diameter x 2 3/4"
Onion, White, Yellow Or Red, Raw

Step 1
Add the cauliflower rice to a pan along with the chicken stock. Bring up to a boil then simmer until all the liquid has reduced and the rice is tender - about 6 minutes. Set aside.Step 2
Dice the onion, pepper and celery. Heat the olive oil in a frying pan over a medium heat. Add the onion, celery, pepper and ground beef. Stir well to combine and cook until the beef is browned all over and the vegetables are tender - about 6 minutes.Step 3
Add the spices to the pan and stir well to combine.Step 4
Add the cooked cauliflower rice and mix into the meat and vegetables. Continue to cook for a minute or two until completely cooked through.Step 5
Scatter over the sliced scallions to serve.

Was wondering if I could replace the ground beef with chicken livers or do half and half? Thoughts??

You can add whatever meat you like instead of ground beef or u can do a mixture, its what you prefer to what u like to taste. I would dice up the chicken livers mix them in spices before cooking first so they can marinate then prep the rest then stir fry them in.
