  • Step 1

    Finely slice the peppers and halve the tomatoes. Add to a large mixing bowl.

    Add the chicken pieces to the bowl and stir to combine.

    Add the paprika, onion powder, coriander, cumin, salt, lime juice, the zest of half the lime and olive oil to the bowl. Using your hands, rub the seasonings into the chicken and vegetables. Set aside to marinate for 10 minutes.

    While the mixture marinates, preheat the oven to 395 degrees Fahrenheit.
  • Step 5

    Arrange the marinated chicken and vegetables across the sheet pan and transfer to the oven to bake for 15-18 minutes until the chicken is cooked through and the juices run clear.

    Scatter over fresh cilantro and serve with a wedge of lime.

              A very good recipe. All the family love’s Mexican food but I’m the only one on keto. They had the tortilla and I used lettuce leaves. No need to cook separate dishes. Win win for me!!

              I did not like the taste of this recipe. I couldn't save the extra veggies that were left over to use later, because of the combination of spices on it. I dont know if there was any one herb/spice or the combination but my entire family agreed that it was not good

                This is so good! I was pleasantly surprised. I didn’t have a lime on hand so I just did two tablespoons of lime juice and it was perfect. This tasted better than fajitas at a restaurant.

                This is a good base recipe. I followed the recipe as written then I added fresh green beans, 1/2 Vidalia onion and I used Cajun seasoning in place of the coriander to spice it up a bit. I do my meal prep on the weekends and I look forward to having this as my lunch this week.

                I have reduced the recipe so that it yields one recipe which the chicken is 1/4 pound alone. Isn't this more than the whole serving size of 100g?

                  100 grams is approximately 1/4 lb (1 lb is 454 grams)
