Keto Peanut Butter Filled Cheese Crackers

Peanut butter filled crackers are one of my guilty pleasures. Here is a great low carb option. They take time to bake in the oven, but otherwise are very easy to make!

  • Step 1

Preheat the oven to 250 F. Cut cheese slices into 6 squares a piece. You can do this by stacking the pieces of cheese and cutting them at the same time.
    Step 1
  • Step 2

Place them on a parchment lined baking sheet side by side, very close but not touching. You should be able to get them all on the same sheet. Bake them for 60 minutes.
    Step 2
  • Step 3

Let the cheese crackers cool slightly so they are solidified again, flip them and bake for another 35-45 minutes. Let them cool completely.
    Step 3
  • Step 4

Fill one cracker with a small amount of peanut butter and top with another cracker.

I can’t seem to understand what I’m doing wrong. I’ve tried twice and both times, after 30 minutes the cheese is dark brown and melted into the parchment paper.

Do you think these would also work with dairy free nut milk cheese?

How do you get them crispy, yet still nice and yellow? Mine start to burn quickly and the past 2 batches have been more chewy than crispy. I still love them regardless!

If they are browning, check your oven temperature with a thermometer and make sure it is 250 degrees and calibrate if necessary. You oven manual should show you how.

Love these, the only thing I do different is sprinkle a little bit of Kosher salt on the cheese.

How do you store the rest? Can they be in a container on the counter or should they be refrigerated?
