Think of this “no lettuce” cobb salad as a snack box: you can enjoy the ingredients individually as a fueling snack, or your can complete a full meal by adding fresh lettuce and your favorite cobb salad dressing! If you are meal prepping for multiple days, save the slicing of egg and avocado for the day of to avoid browning.

  • Step 1

    Start by cooking your bacon to your preferred level of doneness. You can have either crispy bacon or more tender bacon for this recipe. Once done, chop the bacon into “chunky” pieces.

    Cook and egg to a hard boil. You’ll need to cook the egg for 10-12 minutes. Once the egg is cooled and peeled, slice it into 4-5 slices.

    Arrange the egg and chopped bacon in a meal prep container. Additionally, slice your tomato, chop your avocado, and chop or crumble your blue cheese.

    At this point you are ready to enjoy your Cobb Salad meal prep! Enjoy this as a snack. You may also, at your discretion, add fresh lettuce and your favorite dressing to turn this into an easy lunch-sized salad for one!

    I will try this, but I will serve it on a bed of lettuce. One cup of Shredded lettuce is only about 8 cal and one gram carbohydrate So why leave it out?

          Such a pretty plate! I wouldn’t spend carbs on a tomato, but like the idea of sliced egg, bacon, avocado and cheese. Great “to go” box! I’m having a poolside party next week - this would be pretty on that table too. Thanks!

                  Love the idea but the portions are ridiculous! 1/2 an oz of tomato isn't even one cherry tomato, nor is 2 slices of bacon .56 oz, it's barley a fork full. But the picture looks amazing, must be for a party of 10 LOL

                    Realistically, you lose weight on a Keto diet by cutting calories. There is no magic wand where you burn fat and calories differently

                    You can add as much as you want doubling up your carbs and calories so that just depends on what you’re trying to do or how your body response to your food.

                        Gorgonzola is very similar to bleu cheese. However, choosing any white cheese with a little age would be a great substitute. Aged goat cheese or swiss cheese would be delicious.
