This air fryer Keto zucchini bread recipe blends low carb flours with tender zucchini to create sweet mini loaves. The Keto zucchini bread batter is prepared, then divided into mini silicone loaf moulds - perfect for your air fryer basket! These Keto zucchini bread make a great breakfast option or snack smothered in butter.

Keto Air Fryer Zucchini Bread Ingredients

These Keto air fryer mini loaves are prepared with ground almonds, coconut flour, egg, low carb sweetener, almond milk, a hint of cinnamon and butter. This creates a thick and dense batter. Once the loaf batter is prepared, shredded zucchini is stirred through to provide moisture and help to bind the flours.

Keto Air Fryer Zucchini Bread Tips

We have used silicone moulds to cook our mini loaves. If you are using metal or glass loaf tins that are appropriate for you air fryer, please note you may need to adjust your cooking times to suit. These zucchini loaves should be left to cool completely before serving, allowing them to firm up further.

    Add the ground almonds, coconut flour, erythritol, baking soda, cinnamon and salt to a large mixing bowl. Mix everything together well to combine.

    Add the melted butter to the mixing bowl of dry ingredients. Add the lemon juice. Mix everything together well to combine.

    Crack the egg into the bowl. Beat the mixture together until thoroughly combined. You should have a very thick cake batter.

    Slowly drizzle the almond milk into the loaf batter a little at a time. Continue to beat together until smooth. The milk should be fully incorporated into the batter. Grate the zucchini to fill one cup and squeeze out any excess water, then mix into the loaf batter. Beat together, distributing the zucchini evenly through the loaf mixture.

    Divide the loaf batter evenly between 4 silicon mini loaf cases suitable for an air fryer. Arrange two of the filled loaf cases in your air fryer basket. Place the basket in the air fryer.

    Set the temperature to 325 degrees Fahrenheit and set the timer for 25 minutes. After this time, check the loaves are golden, risen and cooked through - a toothpick should come out clean from the center. If not, return to the air fryer to cook a few minutes more as needed. Set the loaves to one side to cool completely whilst you bake the remaining loaves.

    SO IMPRESSED! I've made some other keto breads and they've had a very unappealing egg taste. This bread is so yummy. I'm so glad I stumbled upon this recipe, it's definitely gonna be a keeper.
