This low carb spinach and feta pie makes for an easy Christmas Keto recipe to enjoy over the holidays. Our crustless Keto Christmas pie is packed with flavor from tender spinach, tangy feta cheese, aromatic herbs and spices, sweet dried cranberries, crunchy walnuts and grated Parmesan. The pie filling is bound with a seasoned mixture of beaten egg before being baked until golden. This makes a great low carb brunch or lunch option to enjoy over the festive season.

Can I Make This Vegetarian?

Our Christmas Keto recipe uses grated Parmesan cheese to flavor the beaten egg mixture. To make this recipe vegetarian, you may swap the Parmesan for any hard Italian style cheese that is free from animal rennet. Swap directly for the same quantity as the Parmesan, adding to the beaten egg. Please be sure to adjust your macros to account for any changes made to the original recipe.

What Kind of Spinach Should I Use?

We have used frozen chopped spinach for our savory Keto Christmas pie. The key is to completely thaw the frozen spinach first. Once the spinach has thawed, you will need to squeeze out any excess liquid and drain off before combining with the other filling ingredients.

    Take the thawed spinach and squeeze out as much excess water as possible. Add to a large mixing bowl with the ground almonds. Roughly chop the walnuts and cranberries, crush the garlic and finely dice the onion. Add all to the bowl with the spinach. Crumble in the feta cheese and mix well to combine.

    Preheat the oven to 400 degrees Fahrenheit. Crack the eggs into a bowl, season with salt and pepper. Add the thyme, Parmesan, and nutmeg. Beat well to combine. You may add more spices, herbs and seasoning as desired.

    Spoon the spinach mixture into the base of a medium-sized oven dish. Make sure the mixture is an even layer. Pour the beaten egg mixture over the top, coating the spinach and vegetables.

    Transfer to the oven for 20-25 minutes or until golden brown on top. The pie should be piping hot through and bubbling. Allow to cool a little before slicing and serving.
