The spice mix on this cauliflower is super addicting! It’s sweet, spicy and savory. I like to roast my cauliflower at a high temp for a short amount of time, so it’s done faster, retains a crunch and get some good color. I could see this spice mix on other veggies like zucchini too! This recipe says to use coriander seed, but used ground coriander.

  • Step 1

    Preheat oven to 425 F. Cut cauliflower head into quarters and remove the core from each quarter. This will cause the florets to come apart. Break them up with your hands and toss into a large bowl.

    Mix spice mix together including the cumin seeds, turmeric, cinnamon, cayenne pepper and garlic powder.

    Add 3 T olive oil to cauliflower florets and about half of the spice mixture, adding more if you want more spice. Add 1 teaspoon of salt. Toss again.

    Roast for 20-22 minutes until cauliflower is cooked through, but still slightly crunchy.

          I cut the cayenne in half because I can add it after cooking. Cumin seems to dominate. Didn’t need more cayenne.

            Why didn’t they just cut the recipe for the spices in half? That’s what I did silly to have us make up a big batch and then only use half of it

              Hey guys, new to keto. Quick question, are there any keto friendly supplements for cabbage and cauliflower? It’s not a matter of taste as much as those foods make me really bloated and gassy. Thanks in advance!

                Hi, I noticed your comment, and wanted to give you a kinda related tip, even though I don't have your answer. Garlic can also cause excessive gas and bloating when on keto. I used it a ton in all my cooking with no problems at all my whole life, until I started keto diet last year. Now, while in ketosis, I have uncomfortable bloating and embarrassing gassiness with even a small amount of garlic in my foods. So I looked it up, and sure enough, this is common. I stopped using garlic and the problem cleared immediately. I just wanted to help you out with that info, in case you come across a mystery reason of those symptoms, even while avoiding cauliflower, cabbage, onions, etc while on keto. Good luck with your keto journey!

                      Need to divide the spices by at least 3 and out in small baggies to use next time. This lowers the spicy factor.

                      Absolutely delicious. I too used ground coriander and cumin, and added lemon juice. Also added coconut oil. And for added decadence served with a dollop of full fat Greek yoghurt.

                        Seriously good stuff here.... just sprinkle the seasoning to your taste dont measure... also one advice I would give for those of us with ibs par cook the cauliflower first in the microwave. This will help with the cook time as well. And lastly I use extra coconut mct oil on it to amp up the fat content along with the olive oil. Instead of that you could use a good ranch dip! Hahahaha.

                          I made this last night and it’s SO good! It took a little longer to roast than the recipe said but I think I needed to make the florets a little smaller. At the end it spritzed with truffle oil. dEE-lish!

                            Am I reading this wrong? It gives ingredient measurements for the spices and then says use half?

                              Yes, you are reading correctly! The spice mixture was created to achieve the right flavor for the mix, but it is spicy! So add however much of the mixture you want, but you may not want it all. I used it all because I like heat and the spices are accounted for in the carb count.
