Ingredients
- Anchovy Canned - 2 anchovies 
- Olive Oil - 2 teaspoon 
- Parsley, Fresh - 1 tablespoon 
- Capers - 1 teaspoon 
- Lemon Peel Or Zest Raw - 1 tsp 
- Lemon Juice - 1 teaspoon 
- Red Onion - ¼ small 
- Cucumber - ¼ large - 8 1/4" long 
- Black Pepper - ⅛ teaspoon

- Step 1 Dice the cucumber, thinly slice the onion and roughly chop the parsley. Add to a mixing bowl. Roughly tear in the anchovy fillets and add the capers and lemon zest. Toss to combine.
- Step 2 Season the salad with black pepper and drizzle over the lemon juice and olive oil. Stir well to combine.
