  • Balsamic Vinegar

  • Blue Cheese

    Blue Cheese

    3-½ oz

  • Portabella Mushrooms

    Portabella Mushrooms

    4 piece, whole

  • Iceberg Lettuce

    Iceberg Lettuce

    2 large leaf

  • Step 1

    Heat one tablespoon of olive oil in a frying pan over a medium/low heat. Slice the onion and add to the pan with the balsamic vinegar. Fry gently until golden and caramelised, turning occasionally – about 10 minutes. Reserve to one side.

    While the onions are cooking, add the bacon to a dry pan over a medium heat and cook until crisp – about 5 minutes. Reserve to one side.

    Add the ground beef, onion powder and garlic powder to a mixing bowl. Season generously.

    Use your hands to combine the beef and seasonings well and form them into two large patties Heat one tablespoon of olive oil in a large frypan over medium/high heat and add the patties. Cook for 6-7 minutes on each side until the meat is well browned and completely cooked through.

    While the burgers are cooking, preheat the grill to medium. Brush the remaining olive oil over the mushrooms on both sides. Place under the grill top side down, for five minutes until cooked and tender.

    Remove the hot patties from the pan and layer with sliced blue cheese.

    To assemble the burgers, use one mushroom as the base of each burger. Layer with a slice of iceberg lettuce and then add the strips of bacon. Add the pattie with the melted cheese and then a layer of onion. Top with another mushroom.

      I made this tonight and it was delicious! Very complex tastes with the onions in balsamic and the blue cheese! However, the 1/2 # beef patty was too large. Next time I will make it into 1/3#. Be sure to double up your napkins, it is messy but worth it!!

        I am cooking this tonight, Feb1, 2020. Out of 16 Oz making "quarter pounders" and not "half pounders". If I cannot find large Portebello mushrooms will get the smaller ones and good them with balsamic vinegar and onion and serve them on top of HB and below blue cheese. Hubby gets cheddar cheese on his and no bacon. That's ok. More Blue Cheese for my leftover two burgers. Yum!!

          Haven’t made this yet, but an 8 oz. burger seems a little to much. I probably would make 3 burgers instead of 2. I would used lettuce instead of mushroom ( don’t like. Mushrooms). Other than that, sounds awesome. Thanks

          This was really good, I don't eat mushrooms but my Husband loves mushrooms but not so much as a bun , he didn't like the texture or the way it leaked but other than than the seasoning and other toppings where great !!

          I made mine a little different and loved it. But, I know the way it’s posted would be awesome as well. My way....... In one pan I cooked 2 hamburger patties. In a different pan I melted 2 tbs butter and cooked my two mushrooms. I put a bed of lettuce on my plate first then added HB patty on top then mushroom on top of HB add PB mushroom shredded mozzarella cheese and last drizzled 3 Tbsp with blue cheese dressing. Using the other PB mushroom to make my husband a plate.

            Whatever works for you. When I make HB's I can't stand thick patties, so I almost always mix the meat w/ cheese, &/or veggies.
