  • Step 1

    Heat two tablespoons of butter in a large pan over a medium heat.
  • Step 2

    Finely slice the shallot and add to the pan, cooking until tender.

    Add the cauliflower rice to the pan along with the olive oil. Fry for 1-2 minutes, coating in the oil and butter.

    Add half the vegetable stock to the pan and continue to cook until the liquid has been fully absorbed, then add the remaining stock.

    Once all the liquid has evaporated, stir the crème fraiche into the cauliflower rice.

    Finely chop the chives and add 1 tablespoon to the pan along with the jumbo shrimp, lemon zest and juice and continue to cook until the shrimp are piping hot through – 2-3 minutes.

    Scatter with the remaining chives and parmesan to serve.

    Tastes expensive! I subbed Boursin cheese for a few ingredients and it worked out perfectly. So flavorful and have made it twice in a week now!

                  Really enjoyed this. It was delicious. Added some minced garlic and chopped portobello with the shallots. Extra Parmesan and yum!

                    Not good. Way too much cauliflower, not enough shrimp, not enough Parmesan, not enough seasoning. Big disappointment.

                      A recipe is a recipe, fix it up. Definitely always add more shrimp to every recipe. Duh! Lol

                    This recipe is really good and very satisfying! I just made a few tweeks: I added spinach, seasoned my shrimp w/lemon pepper, used 1/2 cup of parm cheese, and cream cheese in place of the yoplait. Will definitely make again.

                    This was amazing. I added a bit more lemon juice and pieces of chorizo. Used chicken stock instead of vegetable.

                        Awesome, but I did change up with sour cream for the creme fraiche, green onions for chives, yellow onion for shallots, chicken stock for the vegetables stock, and added garlic. Also cooked shrimp separately vs, using precooked.

                          Really good! I even made a roasted chicken version of this recipe. I followed the recipe and than added over roasted chicken pieces to thw mix 😋
