These deliciously simple almond squares are light and fluffy with a hint of lemon and a crunchy top of slivered almonds.

Where xylitol has been used in the recipe, this can be replaced with erythritol or your preferred low carb sweetener of choice.

Recipe Steps

  • Step 1

    Preheat the oven to 340 degrees Fahrenheit and line a loaf tin with baking paper.
  • Step 2

    Add the almond milk, butter, lemon juice, xylitol, eggs and almond extract to a food processor and blend to combine.

    Add the ground almonds, cinnamon and baking soda to the food processor and blend until you have a smooth and creamy batter.

    Pour the cake batter into the lined baking tray and transfer to the oven to bake for 35 minutes.

    Remove the cake from the oven and scatter the flaked almonds over the surface.

    Return to the oven for a further 5-10 minutes or until the cake is cooked through and golden brown all over. Leave the cake to cool completely in its tin then cut into 10 squares.

    Loved this recipe. Used erythritol in place of xylitol, with 2 tablespoons extra to make it equivalent to the quantity of xylitol.

                    Its an amazing recipe, i did some tweeks as i wanted to try smaller amount. All my baking comes out wet from within , so grateful for this recipe it came out perfect.

                        This is the best treat I have found on Keto! So amazing and bakes perfectly - fluffy and so flavourful! This is a game changer for me!! I followed the directions exactly other than adding a touch more Almond extract...and it was absolutely perfect. Can’t thank you enough for this recipe!!

                          I made these into bite size mini muffins and they are great! I used erythritol and added a tsp of vanilla instead of lemon juice. Even my "donut lovin" husband thought they were good

                          Love this recipe! Took out the lemon juice, added another tablespoon of almond milk. Added 1/3 of a cup of dark chocolate chips. So delicious!

                            Big fan of this. I would put the sprinkling of almonds on earlier than the recipe stated next time though, my oven tends to seem to run a little hotter and it was pretty much cooked so all the flaked almonds just fell off. But it was delicious

                            I made this and it came out GREAT. Firm but fluffy like a pound cake. Totally satisfied my sweet tooth in a healty way! The almond flavor is nice, too. I might add a little vanilla extract the next time.

                            I just made this and wow!!!! I’m super impressed. I made a mistake and used 3 large eggs. I also didn’t have almond extract so used vanilla extract. I also used Erythritol and sprinkled Sukrin Gold on top. Not eggy at all like many of the Keto breads. This is a keeper for sure!!
