These tacos are so good on keto tortilla shells (which you can find the recipe for in this app!). The chipotle pepper makes the chicken the right amount of smokey and spicy and pairs so well with the crumbled cotija cheese, sliced red onion, cilantro, lettuce and a squeeze of lime!! These will go quick. The filling is super easy to make because I used an Instant Pot. I added an onion and garlic cloves to the pot, but did not include them into the nutrition count because they are only there to flavor the broth and are not eaten. I did write the amounts into the instructions. I used two split chicken breasts totaling 2 lbs of meat.

    Add split chicken breasts, chicken stock and kosher salt to an Instant Pot. I also added ½ an onion in a large dice and 3 smashed garlic cloves. You will not be eating these, they are only there to flavor the broth and chicken so I did not include them above in the ingredient list/nutritionals. Set the pressure on HIGH and set the timer for 15 minutes. Once time has elapsed allow the pressure to release naturally.

    While the chicken is cooking, wash vegetables, slice the lettuce into thin slices, slice the red onion into very thin slices, crumble the cheese and cut the lime into wedges. Also, chop the chipotle in adobo peppers. Once time on chicken has elapsed, remove the chicken from the broth, take the meat off the bone and shred the chicken into small pieces. Reserve 1-1.5 cups of the cooking broth.

    In a medium saute pan, heat 2 t avocado oil. Add 4 T chopped chipotle in adobo and sear it for a few seconds.

    Add the shredded chicken and stir. Add the reserved broth to help loosen and moisten the chicken. Heat until it is all hot.

    Using the keto tortilla recipe, top each tortilla with 1 oz of shredded chicken, 1 T sour cream, some lettuce, the sliced red onion, cilantro and crumbled cheese. Dividing all the toppings among 16 tacos. Enjoy!

              You have to make them. It's not too difficult, just time consuming.

            I don't have an instant pot but I just boiled the chicken with everything and it came just as good! And I made the keto tortillas recipe and it was perfect! I didn't even feel like I was eating keto it was just like a normal taco!

              Delish! My kids LOVED these also. The tortillas were incredibly easy to make and had a great texture both to roll out and eat. Will be using leftovers for more meals.

                I don't understand all the confusion with serving sizes. The recipes tell you how many they make (this one says 16 2oz tacos). Each person's serving size will be different, based on caloric intake. Some days mine is 1, some days 2. And I can adjust it as I see fit. I own a kitchen scale, and weigh out a 2oz portion for each taco. Why is this hard? Btw, we enjoyed these. Also, Costco has a cilantro lime crema sauce that is awesome on these and keto friendly.

                    Quick and easy way to make the chicken: turn the instant pot to saute and throw in the large chopped onions and saute them in a little oil until they are a little caramelized, then add the garlic and cook until fragrant. Add the broth and simmer for a moment to get the flavor from the onion. Scrape any brown bits off the bottom of the pan. This is really important, otherwise it might not seal right. Pull the onion out, if it doesn't fit in your macros. Use a food processor to chop up the Chipotle peppers, put them in the broth, and then add the chicken. Cook for 12 to 15 minutes in the instant pot. Allow pressure to release naturally. Open the instant pot carefully and transfer everything to a bowl. Chop the chicken up into 2 inch or so pieces. Use a hand mixer to shred the chicken, peppers, garlic, and broth together. Use low-carb tortillas or lettuce cups.

                        Not great. Hell not even good. Way too many ingredients. You wont use a full cup of sour cream. And most of the onion goes to waste as well.

                          I don’t understand the ratios/serving size either...please be more specific in your explanations or I will request my 40.00 for the year back. Quite honestly I can use the tracker and get better instructions off of Pinterest Recipes. This is NOW the 2ND time with poor descriptions of proper serving size and yet you show 3 TACOS as if this is an appropriate serving size

                            The recipe says 1 serving = 2 tacos. Can’t you see that at the very top of the recipe?

                          I was to busy to make the tortilla part so did the recipe boiled (no pressure cooker) and used green leaf lettuce! Super good!
