Here is another easy breakfast recipe that will keep you full and satisfied. I love the flavor the coconut milk gives the yogurt. Greek yogurt is high in protein, but tends to be thick. The coconut milk gives the yogurt as nice texture and the macadamia nuts add a delicious crunch! Be sure to use full fat coconut milk like Aroy-D brand.

  • Step 1

    Melt frozen raspberries in the microwave for 30 seconds, if desired.

    Stir greek yogurt and coconut milk together.

    Top with raspberries, macadamia nuts and unsweetened coconut flakes.

    I tweaked the recipe a bit to fit my carb limit, I used Ratio brand Keto vanilla yogurt (I've seen it at both Publix and Kroger) which was fewer carbs and better tasting than the plain Greek yogurt I had. Chopped the frozen raspberries, since you get so few it's nice the have some in each bite. Then I also drizzled NuNaturals Chocolate syrup on top. ( Zero calories, zero carbs, made with stevia, you can find it on Amazon.) All in all, this was a nice a break from my usual egg heavy breakfast. If you're not a big coconut fan, skip it and save yourself the extra carb or two.

      Not my favorite I used almonds instead of macadamia nuts I’m sad I used most of my carbs on this one 😕

        Delicious! I didn't have the coconut flakes on hand so I used coconut flour instead.

          Wasn't sure what type of greek yogurt to use ( I had Fage 0%) Added some stevia and it was delicious!
