  • Step 1

    Preheat an oven to 355 F. Prepare a round 8” pan by spraying the pan with cooking spray. Combine the dry ingredients (almond flour, coconut flakes, salt, powdered sweetener) together and whisk together to combine.

    Melt the butter in a small bowl. Allow to cool slightly. Add the cooled butter to the the wet ingredients (eggs and almond extract) together and whisk to blend. Slice the plums in half and remove the pit. Slice the plum very thin about ½” thickness for each slice. Place plums in a circle around the edge of the baking pan (that has been sprayed well with cooking spray) and in the center as in the picture.

    In a small saucepan, combine ¼ cup butter, ⅓ cup brown sugar and a pinch of salt. Heat on low until melted and hot.

    Pour over the plums evenly.

    Pour the batter into the prepared cake pan over the plums.

    Bake for 40-45 minutes or until the cake is nicely browned and springs back to the touch.

    Allow the cake to cool completely before unmolding. When the cake is cool, the cake will pull from the sides of the cake pan making for an easier removal. Run a knife around the outside of the cake. Place a plate on top of the cake pan and flip the cake. Tap the bottom of the cake pan until the cake comes out. If any plums stick to the bottom of the pan, gently remove them and place them on the cake where they belong.

        This cake is so yummy. I used more plums than suggested and added a dollop of sweetened whipped cream on top. Delish

          This is a lovely cake. Really pleased with the outcome. Will def bake again. However next time I will use less sugar as it was very sweet. The other downside is 16 slices make each slice tiny. I think 8 -10 slices is more realistic.

              I made this twice In the hope that the second time will be different but nope, I didn’t mess up anything for the first time, too sweet, to much butter in my opinion, looks good but it doesn’t have the cake consistency. 😟

                Add a1 tbsp baking soda. Just add 1/4 cup of the icing sugar and use 80gr brown sugar. I will use 2tsp of melted butter to pour on the plums along 1/4 of brown sugar. I hope this helps. My family loved it.
