This air fryer Keto pound cake muffin recipe combines low carb flours to create dense coconut flavored muffins. Once the cake batter is prepped, the mixture is divided into individual muffin cups and baked in the air fryer until golden. Keto Air Fryer Pound Cake Muffin Ingredients
These Keto air fryer muffins are prepared with a base of ground almonds, coconut flour, desiccated coconut, eggs, low carb sweetener and coconut oil. The batter is quite thick, but if you feel it is too thick and dry you can add a little extra almond milk. Once the batter is prepared the mixture is divided between air fryer muffin cups and baked until risen and golden.
Serving Suggestions
These dense Keto muffins make a great sweet breakfast option to grab and go. Alternatively, these low carb muffins are an excellent post dinner treat. Optionally serve with fresh berries and whipped coconut cream.

Step 1
Add the ground almonds, erythritol, coconut flour, desiccated coconut, baking soda and salt to a large mixing bowl. Stir everything together well to combine.Step 2
Melt the coconut oil and add to the bowl. Add the lime juice. Mix together well to combine.Step 3
Crack the eggs into the bowl. Beat the mixture together until well combined. You should have a thick but smooth batter.Step 4
Divide the batter evenly between 10 silicon muffin cases suitable for an air fryer. Arrange half the filled muffin cases in your air fryer basket. Set the basket in the air fryer.Step 5
Set the temperature to 300 degrees Fahrenheit and set the timer for 15 minutes. After this time, check the muffins are golden and cooked through. A toothpick should come out clean from the center. Cook a few minutes longer if required. Set the cooked muffins aside to cool completely whilst you bake the remaining batch.

We like this recipe. Lemon instead of lime as my lime juice looked a bit off. I also used cashew milk (it was what we had on hand) and added a cup instead of 1/3 cup as the mixture was very dry. I also accidentally added three eggs (looking at too many recipes at once) but it worked out well. Baked in the oven 350F for about 25 minutes. Hubby gave them a thumbs up. The taste was great.

Any idea how I can substitute almond ground? I’m allergic to almonds / nuts so that would be probably my last meal ;)

Peanuts? Coconut? Im allergic to tree nuts except coconut so thats what i will try.

Don't have an Air Fryer. Can I bake in the oven? If so, what temperature?
