Keto Snowcap Cookies
I love snowcap cookies around Christmas! However, it is not something to enjoy when you are watching carbs...until now! I form the cookies using a 1 oz cookie scoop so they are perfectly round and dust them with powdered erythritol (the confectioner sugar version) which gives them a nice cooling effect as you take a bite into them. Almost as if they do have snow on their tops!

The Ultimate Icing Sugar Replacement by Swerve
½ cup
Special Dark Cocao by Hershey's
½ cup
Butter
4 tablespoon
Raw Egg
2 large
Vanilla Extract
1 teaspoon
Almond Flour
1 cup
Baking Powder
1 teaspoon

Step 1
Preheat an oven to 350 F. Combine cocoa powder and confectioners sugar in a mixing bowl.Step 2
Add melted butter and combine with a hand mixer.Step 3
Add the eggs, vanilla, baking powder and a pinch of kosher salt.Step 4
Next, add the almond flour and mix again until combined.Step 5
Form the cookies using a 1 oz cookie scoop so they are even and uniform. Dust them with additional confectioner’s sugar place in a sifter and coat them completely. Place cookies on a parchment lined baking sheet.Step 6
Bake the cookies for 12-13 minutes. I like to cook them to where they are still slightly soft in the center and finish cooking on the baking sheet. Remove them from the oven and let them cool slightly on the baking sheet until firm enough you can remove them with no trouble.Step 7
Dust with additional sugar and serve!

These are really easy to make and tastes like a brownie. I added Walmart nuts to mine which was a great touch
