Keto Easy Fajita Chicken and Shrimp

This super easy Keto recipe is useful for meal prep planning or can be incorporated into a larger meal with side dishes. Chicken and jumbo shrimp make the perfect pair for adding to Keto tortillas or arranging over a salad. At your discretion, you can include Keto guacamole or grilled low-carb peppers to enjoy with your fajita proteins. The Tex-Mex inspired seasoning mix is made with pantry staple spices, so you can whip this recipe up any time. By baking the chicken and shrimp in your oven instead of cooking over a hot grill, you save on time and keep your meats tender and juicy. The rest of this introduction will give you serving suggestions and other recipes you can include with the chicken and shrimp. The original recipe here makes 2 servings, which will be about 5-7 pieces of chicken and 3 pieces of shrimp per serving.

Serving Suggestions

This recipe is a staple go-to in your rotation of Keto meals because there are so many variables you can include. You can enjoy the fajita chicken and shrimp as is with your choice of Keto garnishes, like guacamole, sour cream, or queso. If you have carbs to spare, you can use one of Carb Manager’s Keto tortilla recipes. Simply search the term ‘tortilla’ in the recipe library and select from several options. You can also make cheese chip nachos and top them with the fajita chicken and shrimp. If you enjoy spicy foods, you can add more spice to the seasoning mix with extra cayenne or crushed red pepper. When serving, you can even include sliced jalapeno with your chicken and shrimp.

Other Recipes For Meal Prepping

If you decide to use this Keto fajita chicken and shrimp in your meal prep rotation, you’ll need to include other recipes. • Step 1

Preheat an oven to 350 degrees and brush a seasoned sheet tray with olive oil. For this recipe, you’ll want to oil your cooking surface instead of adding oil straight to the meat. In a small dish, mix together the seasoned salt, pepper, onion powder, cumin, cayenne, paprika, garlic powder, and oregano. If you don’t want a spicy mix, you can omit the cayenne.
    Step 1
  • Step 2

Pat your chicken breast dry and cut it into1 or 2-bite sized pieces. In a large mixing bowl, toss the pieces of chicken with about ¾ of the spice mix. Keep tossing until the chicken has picked up all the seasoning in the bowl. Arrange the chicken on the oiled tray and bake for 15 minutes. While the chicken is baking, you can prepare the shrimp.
    Step 2
  • Step 3

Peel and devein the shrimp, and add them to the large mixing bowl. Toss the remaining fajita seasoning with the shrimp until the shrimp has picked up all the seasoning in the bowl. Once the chicken has finished cooking for 15 minutes, move the chicken to the outer edge of the tray. Add the seasoned shrimp to the center of the pan and bake for an additional 10 minutes. Serve the fajita chicken and shrimp hot or divide into meal prep containers.
