Keto Broccoli Cauliflower Salad

23 ratings

This salad is very simple to put together and tastes amazing with grilled chicken or steak. I love the creamy horseradish dressing paired with the sharp cheddar cheese.

Just made this but added 3 hard-boiled eggs, 1 Tbsp sweet pickle juice and 1/2 red onion. Delightful. I really took my time to cut up the broccoli and cauliflower small and snuck in the stems by dining them little. Kids liked it. I loved it. Also subbed apple cider vinegar for the white. It is nearly 2 hours later and my blood sugar only slightly raised and is now lower than when I ate.

Fantastic recipe .Had this for dinner .Additionally added Chia seed, sunflower seeds for crunch, double the cheese , very tiny amount of pickled Gherkin , only a quarter cup light mayo and 1 light boiled egg - for extra protein Omitted the sugar . Next time will add an additional slice of medallion bacon. It was delicious, very filling .Leftover for tomorrow .

I love this recipe. I have made it a few times and just recently started adding chopped up bacon to it. It is fantastic with or without the bacon.

I omit the horseradish, sugar and vinegar. Add extra 2 oz cheese and some green onions finely chopped. Half and half ypghurt and mayo dressing.

Really tasty. We didn’t have horseradish so we used a 1.5 tsp of English Mustard instead.

This is AMAZING! I was craving macaroni salad, found this, I had a serving for lunch and was satisfied for hours! I'm thinking next time a half of a serving with some protein!!! This will be a staple for the summer at least!!!
