  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and slice the fennel into ½ inch strips and arrange in an oven proof dish.

    Mince the garlic and add to the bowl along with the thyme, lemon zest, olive oil, salt and pepper. Mix well to combine and transfer to the oven to bake for 15 minutes.

    Remove the fennel from the oven and add the capers. Return to the oven for a further 5 minutes until all the vegetables are tender.
