Corn is off-limits on the Keto diet, but not Brussels sprouts! These Brussels sprouts are sauteed until golden brown and then tossed in a mayo-lime dressing and topped with crumbled cotija cheese and Tajin seasoning. It is a great way to mix up the weeknight Keto side recipe and is wonderfully low carb. It is the ultimate way to eat Brussels sprouts and is super easy to make!

What kind of Brussels sprouts should I use?

Please use fresh Brussels sprouts as frozen ones will not sear well.

What is Tajin seasoning?

Tajin is a Mexican spice blend made from lime and chili seasonings. It is delicious and adds a pop of salty and sour to the dish. Feel free to substitute it with more lime juice and dried chipotle powder or dark chili powder.

What should the final dish taste like?

You should taste the nice golden sear on the sprouts with a nice hint of lime, salty, savory cheese, and a little spice! There should be a nice balance between all the flavors.

    Start by trimming the bottoms off all the sprouts and cutting them in half. Preheat a large nonstick skillet over medium-high heat until hot. Add the ghee and swirl the pan until it is coated with the fat.

    Add the Brussels sprouts cut side down into the pan. Not all of them will fit in a single layer so pile any remaining sprouts on top. Turn the heat down to medium. Allow the sprouts to sear for 2-3 minutes, feel free to turn the heat down slightly if they are browning too quickly. Then begin to toss the sprouts occasionally once they are browned on the bottom. Keep tossing them like this until they are cooked to your liking, about 5-7 minutes on low heat.

    Once they are cooked nicely, combine the mayo and lime juice and pour it over the sprouts. Toss them to coat in the mayo dressing. Plate the sprouts and sprinkle with cotija cheese and tajin seasoning. Serve immediately.
