  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Add the ground almonds, Parmesan, garlic powder, salt and pepper to a mixing bowl. Finely chop the rosemary and add to the bowl. Mix together well to combine.

    Coat the chicken thighs liberally in mayonnaise on both sides.

    Roll the thighs in the breading mixture so that they are well coated all over.

    Transfer to a shallow oven tray and bake for 20-25 minutes until the chicken is cooked through and the coating is golden brown.

        Came out very good. I almost ran out of the coating of almond flout, Parmesan and spices, will add a little more next time. Baked for 30 minutes along side some roasted red potatoes in another pan. I left them both in the oven while it was off another 30 minutes and they all came out PERFECTLY! (we live at almost 4000’ altitude)

              Made as specified, but instead of Parmesan, I used plain Bellavitano cheese (which is what Parmesan wants to be when it grows up!). I put this under the broiler for about 5 minutes after it was done. Amazing!

              I used skinless boneless thighs and cooked for 20mins oh man they were so juicy and flavorful. I will be making these again.

                I traded the almond flour with ground up carnivore crisps, left out the rosemary and dipped in eggs instead (I can't have mayo or almonds. And it was amazing!!

                  This was Bomb Diggity good! As my granddaughter would say “It was Gooder..”We added a small amount of marinara and mozzarella on the top and my husband was in heaven. We sat at the breakfast nook, watching the birds play in the yard and ate our Italian cuisine as if we were right there in Italy. The only thing missing was fluted, stemware, and cloth napkins. Bravo and well done on this simple and so versatile recipe.

                      I haven't tried it yet but I'm impressed with this recipe. Sounds tasty, looks like coating holds together and soooo impressed the carb count is down. I really need my fat to increase so I would be trying with skin and bone. Is there a reason skin is removed or just personal preference?

                        I don't know about you, but when I buy boneless, skinless chicken thighs they're never round and pretty like this picture. Instead they're long and flat. So, I cooked them for 15 minutes @ 400 on one side, flipped them over, sprayed a little avocado oil and broiled them until the other side was crispy. Perfection!!

                        This was fantastic! I used Renee's Mighty Caesar dressing instead of mayo with garlic, rosemary, salt and pepper. Cooked in the air fryer at 400 for 15 mins, turned over and cooked another 15 mins. Turned again and cooked 5 more mins to crisp up the top. So good!

                          35 minutes?! That's a lot of time in an air fryer. I always do my chicken thighs (boneless/skinless) for 21 minutes at 400°. They come out perfectly cooked and crispy. Is it due to the coating?

                        Great recipe as far as flavour. Mine were soggy not crispy so I ended up broiling. And cooked at least 35 minutes. Next time I’m going to try air fryer - sounds like success with others. Definitely make again flavourful.

                                        Our family enjoyed this recipe as written, however we did bake for an extra 5 minutes. Even our daughter who’s not a chicken lover loved this preparation! She said it was clucking good!
